Bori can be fried and eaten as a snack or can be added to fish or vegetable dishes to enhance taste and to add variety.
Ingredients:
1000gm Biuli dal or Urad dal
½ teaspoon Salt
3 tsp cumin seeds,2 tsp Black cumin
Ginger 50gm ,Red dry chili 1 handful, Water, to grind the dal
Instructions:
Wash the urad dal aka biulir dal 2-3 times and then soak it for at least 12 hours or overnight. Then next day, drain the excess water from the dal and wash it one more time.
Transfer the urad dal into a jar of a grinder. Close the lid and grind it to a smooth paste. Make sure there are no grains. Add minimal amount of water if required. Transfer the paste into a large bowl.
Add masala,cumin ,Black cumin chili+ginger paste beat the batter in circular motion for 5-10 minutes then with a fork or hand to make it airy.Add salt to taste
Take water in a bowl and check whether beating is done nor not by dropping small portion of the batter into the water. If it floats, then it’s done. If not, then beat for another couple of minutes.
Now take little bit of batter in your hand and using your fingers try to drop little drops with a small peak peeking up. The shape is almost like Harshey's kisses. So just keep doing that, drop and pull your hand up to make the shape. Or just use a zip lock bag, fill it and cut one corner to pipe small drops. You can also use a piping bag with a round nozzle if you want to make it looks fancy...well our ancestors never did it but there's no harm in doing so.
Dry them for the whole day and take them inside in the evening. Check if they have dried or put them out again the next day. Once dried they should come off very easily

Preheat the oven at 80°C/60°C Fan.
Keep the baking tray ready by lining it with parchment paper aka wax paper.
Pour the whisked urad Dal paste into an icing bag attached with round neck nozzle and then make even sized tear droplets on the wax paper lined baking tray by applying slight pressure on the icing bag.
Put the tray into the middle of the preheated oven for 5-6 hours to bake the daler bori.
Check whether the daler bori is done or not by breaking one bori. If the bori is not moist from inside and breaks with a crunching sound then it’s done if not, then bake for further.
Switch off the oven and take the baking tray out of the oven.
Store them in dry clean air tight containers. They keep well for a year or two if stored in a cool dry place.
শীতকালে বড়ি খেতে ছোট-বড় সবাই পছন্দ করে। এই মশলা বড়ি খুবই সুস্বাদু হয়। আপনারা চাইলে এটি বাড়িতে বানাতে পারবেন। তাহলে জেনে নিন মশলা বড়ি বানানোর সহজ পদ্ধতি।
উপকরণ:-
১. বিউলির ডাল 1000gm
২. আদা 50 gm
৩. জিরে 3 চামচ,কালো জিরে 2 চামচ
৪. শুকনো লঙ্কা 1 একমুঠো
প্রণালী:-
১. প্রথমে ডাল ভালো করে ধুয়ে পরিষ্কার করে নিন। এরপর ডালগুলোকে সারারাত্রি জলে ভিজিয়ে রাখুন।
২. পরদিন সকালে ডালগুলি ভালোভাবে ভিজে গেলে জল থেকে ছেঁকে ভালো করে বেটে নিন। বেশি জল দিয়ে বাটবেন না তাহলে ডাল বাটা টি পাতলা হয়ে যাবে।
৩. এবার একটি পাত্রে ডাল বাটা, কালোজিরা ও শুকনো লঙ্কা দিয়ে ভালো করে ফেটাতে থাকুন, যতক্ষণ না পর্যন্ত মিশ্রণটি ফুলে হালকা হচ্ছে।
৪. এবার কুলো, থালা বা পাটার উপর ভালো করে তেল মাখিয়ে দিয়ে ওর ওপরে আপনাদের ইচ্ছামতো সাইজের বড়ি দিয়ে রৌদ্রে শু
কানোর জন্য দিয়ে দিন।এইভাবে ৩ থেকে ৪ দিন রৌদ্রে শুকিয়ে নিলেই তৈরি হয়ে যাবে মশলা বড়ি। এবারে এই বড়ি শুক্তো বা টকে দিয়ে এছাড়া বেগুন ভরতা বানিয়ে খেতে পারেন।
