it's the trim wheels in the 737. The auto pilot is adjusting the trim. The gear was retracted about 30 seconds after V1. Good question and thank you for asking it. If you look to the left and right of the engine thrust levers when you hear that noise, you will get a glimpse of the trim wheels spinning. That's the noise.
