I started watching kbdproductions this year, started with FB only and always wondered who this Paul guy was. I have watched all 66 episodes of the cook and review now. I enjoy watching two friends hanging out and cooking and drinking some beers together even more than the solo Ken food reviews and I love those videos. Congratulations to Paul on his accident and cancer recovery. Please keep these going and a hello to you both from Eagle Idaho

Hi Ken and Paul! Like your show! Paul love the way you smoked the ribs! 5 hrs. Then sauced them and wrapped them in foil. Of course you wrapped the rubbed ribs. They look and probably taste fabulous. Brisket, jalapeño poppers that's a new one, ham, chicken my favorite barbeque meat. Have to watch it doesn't dry out!!!! Love ribs too! I love both rubbed and sauced!!!!

At the end you need to pull the ribs out of the foil and char them a little on some direct heat, to get those blackened parts, and to cook the bbq sauce into the ribs. I do my ribs on a weber grill using the hot side cold side method, then at the end I sauce them and char the sauce into the ribs, that is the best part. At most restaurants they charge extra for a reason to blacken things, because it makes them taste better.

He shouldnt have sauced them before the he wrapped. Should have unwrapped, glazed and smoked for another 20 min.

@@David-en6jg It is normal to add moisture during the wrap phase. I rub the partially cooked rib with brown sugar and honey. add a few tablespoons of apple juice and then return to the heat for 90 minutes.

Try butcher paper instead of foil. It lets smoke in.

@@nexusvideo That’s debatable. It depends on a number of variables such as wood type, how well the fire is burning, the smoker used, the temperature of the meat at the start of cook, the amount of spritzing you do, and some people just prefer more smoke. I wrap after 4 hours with butcher paper.

We know how to smoke ribs down here and in Texas and so do you! Beautiful work! My favorite thing to smoke is a 17 pound brisket. Salt and pepper rub only and 19 hours at 250 and it’s done! Second favorite is a whole brined turkey.

I feel badly for Paul. I'm about a year past being diagnosed with throat cancer, i have the same effects from treatment and they removed all my teeth prior to treatment. So i feel for him. Take care, Mark Swilley.

oh just a shop vac or used ash ever other cookings. we use foil on the grease plate less clean up on the traeger. use grease cup we put a catcher cup from weber that hangs on the lip they built in. have fun cooking/smoking

All the ash in the bottom of the offset is why the fire kept going out. Never seen that contraption but you can’t beat a chimney starter when heating charcoal.

Dry rub all day every day. Want a rib fest got to Memphis in May, BBQ festival. Brisket is my favorite but 12-16 hours is too much time to wait. I have a pellet smoker.

Fun video to watch. A simple tip for better smoke is to have more fuel on that wood. You don’t want it to produce that dirty white smoke. You want a thin blue smoke for cooking. :)

Paul is a good cook. I prefer the old tried and true Coarse Black Pepper and Kosher Salt. If I sauce I use Head Country or Kosmo's Q. I think if your going to smoke a brisket you should have Paul whip up some Armadillo Eggs. (Whole Jalapeño cored out and stuffed with a mixture of chopped brisket, cream cheese,and shredded cheese. Then wrap the pepper in bacon and then encase all that goodness inside some breakfast sausage of your choice and rub them down with your favorite rub and get them on the smoker. I have that same exact smoker as Paul. I also have a weber kettle and a Hasty Bake Suburban I smoke on as well.

That is a cut that you can do really well in your oven as well. Not as good as the smoker but with some good rub and injection, it is really good.

Looks like that quick start gizmo might work on a Weber or like grill but not on an Oklahoma Joe. It seems to need a lot of air flow to work properly. Paul's correct, it's not good for a smoker.

I usually make my ribs with a dry rub in the oven in foil and then just blast them with heavy smoke on the smoker for just 15-20 minutes. Then sauce them up with hoisin sauce, rice wine vinegar and sugar and put them on the grill. I like them quite charred.

I just purchased the same Oklahoma Joe's grill/smoker for my husband in June for our Anniversary/his Father's Day gift after years of him smoking on his homemade smoker and and electric smoker my grandparents had. We are Sweet Baby Ray fans (unless we purchase local sauce from our local meat market. Which we try to do, however his sauces and rubs sell quickly lol).

Hmmmmm I definitely do my ribs differently, I personally like the smoker to come up to 220-235. I smoke them for 3 hours with spitzing every hour. After that I wrap them up and add brown sugar and butter a touch of apple juice. Continue to cook for 2 hours, unwrap them and sauce them up and smoke for about 45 minutes longer. BTW I have a weber smokey mountain charcoal smoker it's great and my favorite thing to smoke is a pork butt
