My favorite part of Thanksgiving dinner. And Christmas dinner, and New Years... I make mine with A LOT of onion and celery, about equal parts veggies to starch, if not more. About a quart each diced onion and celery to a 12 oz package (which has been shrinking over the decades, down from a pound) of stuffing. I use the Pepperidge Farm blue bag, which has a mix of bread types (dark and light) in irregular, crumbled bits. And I add my own seasoning, often fresh herbs that I've kept alive all summer just for this glorious finale. Rik, you always manage to make me hungry!❤

Yep so easy - you had me with the rosemary salt at the beginning lol and then melted butter on the breadcrumbs. Previously been a packet stuffing or made it with bread and made stuffing balls. Love that it can be made 2 days in advance. Then "crusty peaks" and butter ontop 😂 Finally a stuffing sandwich.....❤❤❤ Oh my goodness - what's not to like, Rik!

Sage is awesome. I had a sagged bacon and vermicelli dish in Sicily once. In later life, I tried and tried to replicate it until I got it right. Seldom used, but in my book one of the King of herbs, it's what gives poultry seasoning it's "somethin'-somethin'. It's an indispensable herb for holiday dishes in western culture. I have never seen just an "onion" stuffing. This is great, thanks Rik :)

I’m just at the moment about to go shopping for my fruits etc in order to make your Christmas mince pie recipe. Everyone loved them last year and I was thrilled to have made the pies totally from scratch 😂. I love being retired, I have time to indulge in lots of cooking and baking. Couldn't pass this video by. I love onions almost anyway they're cooked. Raised my own sage this summer too. I appreciate the way you don't say that your way is the only way and to do it the way it suits our taste. I must admit I do like the way you do your prep. I watched a video about Julia Child. They told how she wouldn't hire someone because they didn't cut the onions right. And the way you get everything from the bowl, I was brought up not to waste anything. In our big family there was not much waste and not too many leftovers, I was the last of thirteen children. Oh my I go on too much. But thanks ever so much for making good old comfort food that reminds me of my childhood.

Thank for sharing your recipe and video for home made stuffing. You are right - it is so easy to do and gives me pleaure in making it - the smell when it is is the oven is just lovely and brings back memories of helping my nan in her kitchen. It was my job to make the breadcrumbs out of a stale loaf, by rubbing the bread between my fingers. into the waiting bowl. (The bread was homemade and kept a few days to go a little stale). Sage is such an easy inexpensive plant to grow in a pot. I also dry a few sprigs, so I am never without this auromatic herb.

Both recipes look so good, thank you. I make my mom's recipe on Thanksgiving but there's plenty of room in our lives for your versions. I'd never thought to use bread crumbs, I've always used shreds or cubes. And, I've got a couple of canisters of Panko in the pantry that I just don't like and now they'll be wonderful thanks to you.

Delicious! 😊 in the southern US we use cornbread, some stale breadcrumbs. The spices used vary from person to person but I'm a sage and onion girl. Butter and chicken broth with a few eggs. I prefer a stiff mashed potato texture in mine, no gravy needed unless you want it. ❤ I love your channel.

That’s how I make my stuffing but I use broken up bread. If I have leftover stuffing after stuffing the turkey, I put it in a muffin tin and it gets crispy on top. Love stuffing on a cold turkey sandwich with some cranberry sauce on it.

My recipe is almost identical to yours Rik, (except for the rosemary salt, which I will try next time). I always roll the mixture into balls and then I freeze them in a ziplock bag. Whenever we fancy some with a roast, I take out as many as is needed and bake them from frozen - they have a lovely crispy outside and are just delicious. Also superb cold, crumbled in a roll /sandwich with leftover roast chicken or pork and a smear of mayo...

My mum always made her own sage and onion. She always rubbed the butter in the ingredients and never with white cut bread and never in a dish, always in the Turkey or chicken for a roast.

I've just chopped my sage right down to pot level so will now use the dried sage with your recipe. I love sage and onion at any time of year but have always used the old faithful packet, I'm going to do my own now, just wish I'd have dried a few leaves 😢 . Could have used your stuffing recipes a month ago for our Thanksgiving 😅 . Christmas is coming and any time will do. We used to use a sage and onion type dressing to roll inside a flank steak or a thin/butterflies round steak. Tied it up with string and roasted. We called it "mock duck" for some reason. Was a nice meal on a Sunday along with roasted veg and dark gravy. Got a laugh from the squash and fluff- was exactly what I was thinking.

I boil the onions and use the onion water to get the right consistency. Fat is supplied from pork dripping from joint mixed in when all other ingredients mixed. Lots of pork jelly in dripping is fabulous. No butter or egg needed 😂

This is a use for the day-old rye bread that I purchase from a favourite local bakery. I get to shop about once every two weeks so I stock up and I freeze bread for toast and baking projects. Shopping requires a trip by private vehicle so its a big-shop to ensure the fuel cost are not spent on extra trips to the nearest small or medium sized town. There are no convenience stores nearby.

I add sausage meat and chopped apple to mine. Now, Ric, if you want to pay homage to the neighbors to the north, use oats. I know. It sounds weird. But the outcome is fantastic and my mother always used it in chicken. Lots of butter, some sausage, herbs, onion, apples and oats. Moisten a bit with cider or stock. I invite anyone to give it a whirl. Nice option for people with wheat sensitivity.

Ive been nominated to make the stuffing for Christmas dinner, so im using this recipe, i would normally use pork sausage meat, can i incorporate it into this recipe? If so - any tips please? X

Heat a large skillet over medium heat. Crumble the sausage meat into the pan and cook until browned. Remove and set aside. Make the rest add it altogether - roast. Thank you. Best, Rik

One great thing about making it from scratch is you can control the sodium. Packets have an off the chart amount. *Never tried nor seen stuffing balls, going to do that! * A stuffing sandwich? 😂
