Stuffing/dressing here in the states has a lot of variables as to what you call it. Anything from region, how you were raised to what your great, great memaw's cousin's sister used to call it. Me, I take a sort of logical approach. If it's in a bird (or pastry) it's stuffing because you stuffed it in. If it's in a dish sitting there it's dressing because it's dressing up the table. Easy peasy.

I think that you are substantially right. What's difficult for us to understand is that the states are viewed as much more monolithic than we really are or have ever been. Dressing versus stuffing. Skillet versus frying pan. There are a lot of regional differences in the way we name things, but the country itself is so large that that gets lost on a lot of people, including a lot of Americans. As opposed to in the former Yugoslavia where you had leb and cru both meaning bread depending on where you came from, but you were operating in an area that was the size of Ohio. So it was easy for people from Columbus to know what people in Toledo called things Much harder when someone in Central Europe needs to try to figure out what the states mean by a word. But I agree with you completely that stuffing mean stuffing and dressing means not stuffing

Omgoodness that take me back to when I was young in the 60s. Visiting my grandfather on a weekend he always had a steam pudding bubbling away but I remember he done it in a pillow case. Lol

Oh Dear, I have just come from Cheryls channel 'What;s for Tea' and she did a steamed jam sponge so I am a little podged at the moment. I love this type of thing. Short trousers, socks around the ankles and dirty knees comes to mind - and that was only the other day. Beano Comic and 'The Bash Street Kids'. I'm reverting apparently.

My Mum makes a similar steamed version in a pudding bowl, like a steak & kidney pudding. She uses “cooking” bacon from the supermarkets which is a pack of trimmings and usually has some nice chunky bits inside. My Nan used to put potatoes inside hers to pad it out to save money when times were hard. A real family favourite and a perfect winter warmer 😊 Thank you for sharing 👌🏻

My partner is over the moon to see this, it was a favourite of his great nans to make she would steam it some times as you mentioned with a sweet side on the end however her favourite way was to oven cook it for that wonderful crust and she believed it improved not just the texture but the flavour. 👍👍👍👍

Another great recipe (personally, would use the less salty UNsmoked bacon). I have only ever steamed pudding/roll polys, but this way actually looks like a better result, slightly crusty pastry, and is faster too. There is something I just love about watching you cook.. the unpredictability, the mess, the things you forget etc!! Keep up the gr8 work!!!

When I was a kid my parents called it Bacon Badger , it was also only steamed, i make it these days for my aussie wife and she loves it as i add mushrooms and i do not use stuffing, i think that is a bit suspicious , for herbs i use some mixed herbs or Italian seasoning

First...thanks for Shoutout. I didn't expect that. Second, an awesome result. and I will try your stuffing addition but I won't dice the bacon. Third, folks who can't get the boxed suet, just ask your butcher for some! He'll probably give it to you in a big white lump (mine does) and then you can freeze it and grate as required.

I don't know if UK butchers actually have suet these days, but I'd bet money that they won't give you it for free! In Madrid I used to get it from my regular butcher on the market - took a while for him to understand that when he prepped the riñones I didn't want him to throw the fat away. El inglés tonto.

Hi mate enjoyed this recipe My old Mum used to make Roly Poly for us kids in the 40,s& 50,s ,as a cheap wholesome meal all types of meat or offal ,which was flour dredged beforehand the herbs came from the garden Also part was steamed without filling . This was sliced and Jam or treacle was put on with custard or whatever was available

As long as you don't greet us with "Greetings Gastropods", it's all good, imo. lol Dressing Vs. Stuffing....If it is inserted into the meat (turkey, chicken, etc.) and cooks with the meat, it is a "stuffing". If it is not inserted into the meat and cooked separately, it is a "dressing". When I was a child, stuffing and dressing were served at family get togethers because the cavity of the turkey wasn't large enough for everyone to have a serving of the stuffing. So a pan or two of dressing was made and cooked so everyone could have some. I preferred stuffing because it cooked inside the turkey and had more flavor than the dressing, even though both were made with the same ingredients. Anyhow, sometime in the late 1980s-early 1990s, stuffing was eliminated from our family get-togethers because one of my aunts read something that the stuffing never got to the temperature to kill the bacteria clinging to the inside of the turkey and we would all get sick and die. Sooooo...we stopped having stuffing and dressing and only had dressing after that. The family conspiracy theorists think Auntie just didn't want to stuff anything because it was easier to put it all into a pan and cook it separately. Here's a tip for the boxed dressing/stuffing/whatever you want to call it: dice one or two slices of fresh or day old bread, add it to the mix, and follow the box directions. The additional bread will reduce the salty taste.

I love your wife for her appreciation of proper rib sticking food as soon as I'm paid next Friday I'm off to get the ingredients vi haven't already got I've always got the atora as I make a lot of dumplings I live alone and I'm in my sixties and I want proper food most of the time just like this a friend says what's the point when you live alone I say left overs I hate to waste any food whatsoever I'd make this and freeze it in portions as I do almost of my meals in fact I have two large freezers at the moment both stuffed to the rafters. and yesterday at work I was offered an under the counter freezer for free plus it will be delivered tomorrow I've just made the area ready for it and I can't wait for it to arrive I shop monthly and batch cook for convenience

If you put the bacon parallel to the short side of the pastry, then when you cut it, you're effectively cutting all the bacon into small pieces. So that would address Mrs. Keith Cook's extremely sensible observation and still not make any more work for the cook.
