Ingredients
Basmati rice -2 cup
Cashew nut few
Oil -2 tbsp
Ghee -2 tbsp
Shahi jeera -1 tsp
Cardamom -4
Clove-4
Bay leaf-2
Cinnamon -1 inch
Ginger-2 inch
Garlic flakes -8
Green chilli -5 to6
Mint leaves -1/2 cup
Coriander leaves -1/2 cup
Onion sliced -2
Garam masala -1/2 tsp
Water for cooking the rice
One cup rice means 2 cup water
Salt as per your taste
Method: wash and soak basmati rice for 20 minutes.Take a mixer jar.Add ginger, garlic,4 green chilli make a paste and keep aside.Take a pressure cooker. Add oil and ghee , add Shahi jeera, cinnamon, cardamom, bay leaf,add the sliced onions, green chilli slitted 2 saute for 2 minutes.Add the ginger,garlic,chilli paste mix well and cook for a minute.Add mint leaves and Coriander leaves mix well.add garam masala,salt.Add the soaked rice saute well for a minute.Add water and pressure cook for 2 whistle.Our yummy Bajaja rice is ready.

Brinjal gravy
Brinjal -5 to 6
Mustard seeds -1/2 tsp
Cumin seeds -1/2 tsp
Curry leaves few
Tamarind amla sized soaked in the water.
Oil -3 tbsp
To Roast and Grind
Ground nut -1/2 cup
Dry coconut -1/4 cup
White sesame seeds -1 tbsp
Poppy seeds -1 tbsp
Coriander seeds -2 tbsp
Cinnamon -1 inch
Methi seeds -1/4 tsp
Clove-4 to5
Black pepper -1 tsp
Red chilli -5 to 6 Adjust according to your spice levels.
Turmeric powder -1/4 tsp
Salt as per your taste
Jaggery powder -1 tsp
Take a kadai.Dry roast one by one.Add ground nut roast and keep aside, poppy seeds roast and keep aside, sesame seeds roast and keep aside.Dry coconut, coriander seeds,red chilli, cinnamon,cloves methi seeds, pepper roast and keep aside.Take a mixer jar add all the roasted spices and Grind well to a fine powder with little turmeric powder and salt and keep aside.Take brinjal slit in to 4 sides with out cutting full add the powdered masala and stuff inside the brinjal and keep aside.Take a kadai.Add mustard seeds, cumin seeds, curry leaves.Add the stuffed brinjal and fry well and cook until it changes the colour.Add the tamarind water,salt jaggery powder and cover and cook for 10 minutes until the brinjal is well cooked. Garnish with coriander leaves.
And serve with Bajara rice.
