Our bakers have always wanted to make bagels! Until now, we did not have the equipment (a shaping machine, a boiling kettle, and a special oven). Traditional bagels, which originated with the New York Jewish population in the early 1900's, use only basic ingredients, similar to most of our breads. Their quality is determined by the process, and we like the challenge of focusing on the process! The advent of the bagel-shaping machine in the 1940's paved the way for bakeries to make hundreds of bagels a day. You'll see our bagel machine in action in this video, and it's pretty amazing to watch. Note: in 2015, our recipe changed to include honey, canola oil, and sourdough starter. We updated the video, but the 2015 version is basically the same (with jazz instead of rock music).
