I love how Bokyung ate pinakbet. I learned when I was in my early 20s that you have to try to eat all the ingredients all at once to experience the real taste of the viand. That's why I love pork sinigang because when you eat the pork with the veggies and soup at once, it just blows your taste buds away, same way with pinakbet. If you eat pinakbet with garlic rice and any fried fish, this combination is also a bomb. Glad you enjoyed the foods teehee

Pinakbet is Ilocano food. Most vegetables in Manila come from Baguio and places around it...

Kanya-kanyang bayad, in short KKB...hehe Baguio has changed a lot though. During my elementary years, Baguio houses has small or wide front yard with around 2-3 pear trees. There can be avocado trees, guava trees and wild berries (in the mountains) elsewhere too. but most houses have our own small garden with so much sayote hanging on fences. Today, Baguio weather has come hotter. March to early May isn't this hot before. Well, global warming and trees around the city has lessened. Understandable. Just thankful that we still get to enjoy 16 degrees Celsius at night in summer. Have fun and hope for you to be back in February for the Flower Festival. Baguio is famous for its flowers too.

I have a thought on how ampalaya became one of the main ingredients of pinakbet. because come to think of it, pinakbet is already an awesome dish without the ampalaya. They just probably thought of adding it, not for the flavor but for health benefits. They found a way to make the veggie palatable. Pinakbet is actually a good way to eat a lot of ampalaya without noticing too much of the bitterness.
