- 1 cup all-purpose flour (maida)
- 2 tablespoons semolina (sooji)
- 2 tablespoons ghee or clarified butter
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup powdered sugar
- 1/2 teaspoon cardamom powder
- Oil for frying
- Water as needed
Instructions:
1. *Prepare the Dough:*
- In a mixing bowl, combine all-purpose flour, semolina, ghee, salt, and baking powder.
- Mix well until the mixture resembles breadcrumbs.
- Add water gradually and knead into a stiff dough. The dough should not be too soft.
2. *Rest the Dough:*
- Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
3. *Shape the Shakarpara:*
- After resting, knead the dough again for a minute.
- Divide the dough into small portions and roll each portion into a ball.
- Flatten each ball with a rolling pin to about 1/4 inch thickness.
- Using a knife or a pizza cutter, cut the flattened dough into small diamond or square shapes.
4. *Fry the Shakarpara:*
- Heat oil in a deep frying pan on medium heat.
- Once the oil is hot, carefully slide in a few shakarpara pieces at a time.
- Fry them until they turn golden brown and crispy. Make sure to stir occasionally for even frying.
- Once done, remove the fried shakarpara using a slotted spoon and drain excess oil on paper towels.
5. *Final Touch:*
- Allow the fried shakarpara to cool down slightly.
- In a separate bowl, mix powdered sugar and cardamom powder.
- While the shakarpara is still warm, sprinkle the sugar mixture over them and gently toss to coat evenly.
6. *Serve and Store:*
- Let the shakarpara cool completely before storing them in an airtight container.
- Enjoy as a crispy snack with tea or coffee!
