Bajan Bittle - A Culinary Excursion
Filling
1 cup Grated Dried Coconut
5 Tbsp Water pinch Ground Spice
4 Tbsp Sugar
1 tsp Vanilla / Almond Essence
Dough
2 cups Flour
1 tsp salt
1 1/2 tsp Instant Yeast
1 Tbsp Shortening
2 tb Sugar
1 cup room temp. Water
Glaze
2 Tbsp Brown Sugar
1 ½ Tbsp Water
Method
Line on 8x8 baking pan with baking paper. Mix all filling ingredients together and set aside. Mix glaze ingredients and set aside. In a medium-sized bowl, mix all the dry ingredient, and shortening together. Make a well in the centre and add water slowly, stirring until mixture forms a ball. Mixture will be sticky. Cover and set aside until dough has doubled in size. Place dough onto a floured surface and gently knead for about 3 mins. Roll flat with a rolling pin and cut into 4x5 rectangular shapes. Place a teaspoonful of filling in centre of rectangle, fold ends over filling and roll up to close. Put into baking pan. Set aside until turnovers rise, then, place in oven at gas mark 375, bake for about 15- 20 minutes until golden brown. Remove from oven and brush on glaze. Return to oven for about 5 minutes. Serve warm or let or cool before eating.
