How To Make Pizza Dough in a food processor - super easy !

Big big shout out to you for throwing out that safety tip, I've been browsing pizza recipes using food processor and you were the only one so far who has thrown out that safety tip and I really really appreciate it, I've never made pizza dough but always wanted to and the only tool I really have that can help is a food processor so I am very apprehensive and nervous to try this but I am also excited to expand my horizons. This recipe looks super simple and I genuinely appreciate it, I will be making it soon so I will be back to let you know how it goes, thank you again for this!

Good job I was using the breville food processor and learned that compared to the breville mixer it takes a shorter time to knead. I also learned that it can get pretty warm in the food processor. On a safety note thanks for letting folks know to unplug the food processor before sticking their hand in the bowl.

i just made this and when i took it out the processor to kneed it and make a ball i did it forever because of how beautiful and smooth it was lmao. i almost dont wanna cook it lol. great video

I have the 14 cup cuisinart and I made my first ball of pizza dough using the dough blade. I don't know why the 14 BCN does not come with a dough blade so I bought one. Man does it ever make a difference! The dough rises like crazy and like you said, it is warm to the touch. I'll never use the metal chopping blade for pizza dough again. I think you discovered how to skirt around the issue of flour coming out of the unit by adding first the water, and then, a cup of flour. I can hardly wait to try the pizza out. I know that it will be awesome. Thank you for this video.

I really enjoy all your videos. I did try one of your recipes. It turned out great. Please advise if the cups can be measured in grams and how many grams to a cup in your recipe. Also, can I use bread flour instead.

As KitchenAid is the king of stand mixers, Cuisinart food processors have been king in North America since the 1970s. They are built like tanks. I'm not sure if Cuisinart is available in Australia, but maybe so. If you are Googling it, I'm guessing you have never heard of it LOL. It's a great food processor, and is a great choice. good luck with your dough !

Wow that looks good man. I saw your video on calzonies and I was wondering if you can use baking powder on your dough. If so how do you use it ? I notice your calzonie dough had that nice white powder on finish can you also use that on in the last stage of dough tossing?

No baking powder, what you see there is flour. You may see this in bakeries that sell home made artisan bread, you'll see parts of the bread that have white, and that's flour that hasn't been brushed off. dolkar lhamu Hi dolkar, yes ! absolutely ! you'll make a truly lovely dough with the olive oil. Many times I do a combo of olive and veg oil, or olive only, or olive and canola oil, it just depends on what my mood is :-) Good luck if you try it out, and thanks for watching !

we make pizzas every Saturday night for dinner (5 teenage kids,2 adults). I usually make all the pizza dough in my bread maker but it died a couple of weeks ago. So i have had to to resort to making the dough by hand, but this morning i thought this is ridiculous i loose half my morning. I wonder if my food processor can make dough. I you tube the question and you pop up, omg how easy is that. I also found out what that little white blade is for. Thank you so much, I've subscribe to your videos but i have to go and make alot of pizza dough now. so I'll watch your other videos tonight :) thank you again my sanity and extra time has been restored.

I’m sure it will depend on how strong the motor is in your food processor/how much wattage it has. I think this guy is using a Breville food processor, and I’m not sure if they have been made similar since he bought his, compared to what the brand makes today, and if the wattage varies on different units, but the one that I want to buy is a whopping 1200 watts! That is why he only has to have his food processor kneed the dough for 3-4 minutes, versus a KitchenAid stand mixer which only has 500 W and needs to kneed the dough 7-8 minutes. Also, because a kitchenAid stand mixer doesn’t have as powerful of a motor, you can only run it around four minutes at a time and have to let it cool down for a little bit or else you risk overheating it. I almost succumbed to buying a stand mixer, but it seems to be a no-brainer to buy this food processor instead. If you were going to use a stand mixer for making dough, then a powerful one to look into seems to be the Bosch brand.

Hi Susie, you could indeed roll out the dough into little balls, fill with cheese, meat, a sauce, then close up like a dumpling kind of thing and then bake, yes :-) I do this all the time.... pizza balls :-)

Hi born2burn1, same ratios, but I wouldn't use 100% whole wheat... maybe a 50-50 ratio of all purpose and whole wheat or 75% wholewheat max. If you make a lot of wholewheat bread and have had success then go ahead and use 100% whole wheat. Thanks for watching !

Hi Greg, when dough is very young, ie - you make your dough, and use it an hour or 2 later, the dough does not have time to evolve. Yeast is a living matter, so it changes and enhances in flavour over time. If you leave the dough overnight in the fridge, it continues to grow, to mature, and the flavors get get better. It's like leaving chicken with a marinade overnight in your fridge... if you season some chicken and leave it there for an hour, it does not take on the flavor it would if it had sat in that marinade overnight. IF you leave your pizza dough for 3 days in the fridge, so say make it on a Monday and use it Wed night or Thursday, the dough will be 100% different from day one. The dough starts to ferment in a way that the dough goes sour, and if you love sourdough bread, you will really like this kind of pizza dough too. I hope this helps a little bit. What caught my attention was the fact that once the dough was made, I could leave in the fridge. On many levels, this appealed to me.....busy!! Then, when I do have a break, I want a break...maybe a wee bit lazy...haha. Thanks and going to attempt at 11pm

Well, seeing as I've worked by backside off the past few weeks, I shall have a pizza night Sunday. I will make the dough and chop ingredients in the morning :) and may I add, that's a massive food processor you have! I think moms is about 2/3 the size..

Hi Sarah, to make things even smoother, I suggest making your pizza dough Saturday night. Make it, let it rise for maybe 30 mins... punch it down in your bowl... spray with cooking spray, and cover the bowl with plastic wrap. Keep it overnight in the fridge.. this is what we call a slow ferment. The yeast will get cold, it will get sleepy and the yeast regeneration will slow down, and all those flavours in the dough will really come together. I like doing a doug at times that I will keep in the fridge for a full 3 nights ! - when you open it, you get this amazing sour dough aroma and taste in the dough, it's awesome ! An overnight ferment is great though, the dough becomes that much better. I know not everyone wishes to do this, but it's a great way to go. If you make and bake the dough the same day, make the dough a few hours before, so that the dough gets time to develop and rest. Always make a ball so that you don't need to reshape the dough later - the only thing you want to do is roll it out... never reshape ( you do that before the rest period ) Have fun ! and yes that's a large processor, but not even the largest size Cuisinart sells.

yes you can also use bread flour, don't change anything in the recipe, it will be fine

@@allisonrichardson1780 I wonder what works better… polenta or semolina (like I see most people use). I don’t have any semolina, but I do have a bag of corn meal which I don’t know what else I would use it for. I got it free from my local food pantry.

Thanks for a great video! I'll try this tonight or tomorrow. Tip: put the cheese on just after the tomato sauce then your ham or whatever on that. This will let all your ingredients get a nice color and will remove that watery effect you so often get with homemade pizza. Cheers!

+Kim Kelso Hi Kim, thanks for watching :-) Cheese usually goes on top of the pizza sauce, but yes, any way you wish to add your ingredients is great. I often will put a layer of pepperoni over the sauce, then the cheese, then more pepperoni on the top of the cheese. Many pizza joints do this when you order a more of a supreme pizza. - so you are getting 2 real layers of pepperoni, lke you would in a Chicago style deep dish. I love thinly sliced mushrooms, super thin.... they broil up really nicely on the top of a pizza. Yum !

Mr bakelikeapro, is there a need to add the yeast to warm water separately for 10-15min until it froths. I see you didn't do that using the food processor?

mkozzie Hi mkozzie, I use instant yeast, so there is no need, however check the yeast you use, on the package or bottle it will tell you if you need to proof it first. The technique you speak of is called "proofing" so check for this on your yeast to make sure. I hope this helps.

No, no need to precook it. I roll it out, add the sauce, cheese and toppings and right into a 450 degree F oven. You can go with a 475 degree oven if you wish. At that temp you are taking about 12 to 14 minutes. I have many videos of me making pizza here on KZbin, where I go into a lot of detail about the pizzas. I must have a dozen good videos here, so I invite you to watch some of those too, you can get some good info from them. I've been making pizzas for over 30 years and have worked in many pizzerias. I made the pizza dough yesterday and it was great! However, I don't think my food processor liked running constantly for 3 minutes, it really seemed to be overheating. Would the recipe also work in a food mixer with dough blades?

You really need a good quality work horse. Cuisinart builds very heavy duty machines. You don't indicate what brand of food processor you used. You also must use a food processor that is large enough to work with the amount of flour you wish to use. You could take this recipe for example and 1/2 it and see how it goes. In this recipe I did indeed use a dough blade. Any other blade ( metal ) will not work - it will rip the dough apart, thus destroying it. Only use a dough blade. ( In this recipe, I use dough blade, your question makes me think you didn't watch the video, if you had, you would have known I did use a dough blade ) so now I'm confused. Anyway, I hope I was able to help you today.

@@BakeLikeAPro I have the Kenwood FPM250 food processor. I did watch the video, but - indeed - I didn't notice that the blade used was a dough blade. In my food processor I did use the dough blade. In my question about a food mixer, I should perhaps have said dough hooks, rather than blades.

Hi, you said in the comments that yeast likes warmth. I usually just pop this dough into the fridge right after I make it for a at least a few hours or overnight. Is that wrong? should I let it sit just after I make it before putting in in the fridge and covering it in plastic? for say 30 min without plastic in a bowl covered with oil? Also, will this dough turn into sourdough after 3 days in the fridge? and can sour dough be frozen and put in freezer after this 3 day fermentation period? If it stays in the fridge for more than 3 days will it spoil?

Itazuke Dee Hi there, yes you can, I do this all the time. You will want it to rise in the bowl for a good hour, to make sure the yeast is working correctly, now punch if down, wrap it up and under itself to make a smaller ball, and now place it into an airtight container, and into your freezer. It works well, and without a problem. When you bring it out of the fridge, do NOT heat it in any way --- just let it thaw normally on your counter. The dough will be perfectly fine when you are ready to use it for your pizza.

Anna Maria Stone Hi Anna Maria, ah great to find you know you found the answer :-) In reality, many will bake their pizzas at different temps.... some will do it at 400 degrees F, or 425, or 450 degrees F. Pizzerias ( where you buy pizzas ready to go ) - their ovens are around 800 degrees F. At home, anywhere from 400 to 450 degrees F is fine though. Thanks for watching Anna Maria :-)

Itazuke Dee Bread needs more yeast, pizza requires less yeast because it doesn't need to rise like a loaf of bread. Slightly different recipe for bread. I do have a bread recipe on my channel

I have not tried it with a metal cutting blade, but would think it won't work correctly. All large food processors come with a dough blade so it's not an issue.

+Mr Wolf I used a very large pizza tray for this pizza. It was about 20" in diameter. This dough can be split into 2 equal dough balls, right after it comes out of the food processor, to make 2 pizzas at 14" each approx. It really depends on how thick or thin you wish your dough to be. I have a good dozen or so pizze video recipes on my KZbin channel here, where you will see much more detail which may give you better info to make things very clear. Hi Steve, you can go anywhere from 550 degrees F down to about 450 degrees F. Higher temps means shorter times. I have too many other pizza videos to mention where I go into bake times, and show the final pizza ( like the video I posted yesterday )

msafna Hi there, yes it's normal, depending on how hot your water was, this can affect how warm your dough is, and also the heat from the food processor will increase the heat in the dough. You can take a thermometer and pop it into the dough to take a temperature reading if you wish, but do not worry about it. Yeast loves the warmth, and you should keep it in a warm area for it to rise correctly. Don't worry about it being hot. My dough I will say is "warm" but not hot, where I could not touch it. I will assume you mean it is warm to the touch.

Hi Kerrie, Yes you can! I'm going to guess you haven't seen any of my other dozens of pizza videos 😁 In most of them, you will see me dividing the dough into more than one dough ball. *THE* ... *MOST* *IMPORTANT* thing to remember -- you MUST divide the dough ball that you made with the dough, into the sizes you want - at the beginning... before the dough rises ! .... flour contains protein... dough has gluten... it's like elastics inside your dough. IF you cut your dough after it has risen, it's like cutting a stretched elastic with a pair of scissors.... the elastic springs back ! and that is not good. You have essentially damaged the dough. I'll send you a link to a video where I show this. I have more than a dozen videos for pizza dough and in most of them, I do split the dough balls up... and in some of them go into more detail than others. IMPORTANT thing -- split the balls at the beginning into the size you want.... THEN let them rest and grow in the containers... and you will make AMAZING dough ! 😁

Everyone in KZbin making dough in a Food Processor talks about the Temperature 🌡 of the dough as a result of the #BladeHeat. I wonder if we a should measure the temp of the dough & the blades (plastic or metal) intermittently? (In assuming any temp rise would be a result of mechanical friction & or motor heat?)

If one is concerned with "blade heat", then I'd encourage them to switch over to using a stand mixer. In reality - both machines will produce heat. I've been doing dough like this for 30 plus years in stand mixers and food processors. I'll let my end product ( the finished dough ) be proof that there are zero worries about blade heat. That dough when removed from the machine is *not* hot. It is warm. I also will say that this is a plastic blade, it does *not* cut into the dough. If you watch anyone using a metal blade to make dough, it's 100% incorrect to use this method as it cuts the dough. The blades in my video do not cut the dough, they are used to move that dough around in the mixer. Most of that heat is created by the dough rubbing against the side walls of the bowl. Look carefully at the volume of dough VS the location of the blades, you'll see the dough spins against the inner wall of the bowl. IF one were really worried, then start off with cool water, and that way the dough will be that much cooler, however cold water is not good for yeast. BTW, if blade heat were an issue, where the heat got so high that it killed the yeast, then the dough would not rise. I've never had t his issue. Deni RN, whatever method you feel most comfortable with, use that method. I hope this helps a little bit. 😁

Hi again Deni, thanks for your reply ! I appreciate it ! Yup, never use metal blades. When you make dough, you never ever cut that dough until the end of the process. Imagine what a metal cutting blade is doing to that dough ! it's cutting the dough, this in turn is damaging those important strands of gluten that are forming, so it goes against everything you are trying to accomplish ! When you make bread or pizza dough, that dough is formed with care, in whatever machine you choose to use, and then it is cut at the end when forming those dough balls. That's it, it will never be cut again. Cutting breaks the long elastic strings of gluten that are formed during the mixing process ( notice I said mixing and not cutting ) Anyway, you got it Deni !! Hi Paul, sorry about that. I do have another 20 videos or more here on KZbin, many if not most of them have Metric measurements. For this recipe I'll take a fast look and give you measurements: 250 grams warm water 5 grams yeast ✅ 5 grams salt ✅ 10 grams granulated sugar ✅ 30 grams vegetable oil ✅ or any oil you like. You can use olive oil. 450 grams PLAIN flour ✅ ( this is called all purpose flour where I live here in Canada )

Hi Paul, you're very welcome. I hope you try the recipe out. In the end, pizza isn't much different than making a good bread recipe. It's easy, and enjoyable. Where I live here in Canada, pizza is expensive, a large pizza these days runs you about $26, insane. When you start to break down the ingredients you quickly see you're paying quite a bit for flour ( the crust ) and a few ingredients. It's just so cheap to make it at home. Hello ! yes you can, but make sure you cut the dough into 2 pizza balls BEFORE it rises ! so once you make the dough, divide it into 2, and then round the dough balls and let them rise. Hi Sonia, *all* models this large came with that plastic blade. I'd doubled check your box to see if it is in there, or check the product page for your exact model. I have never seen a Cuisinart that didn't have this blade - it's one of the most used blades. I wonder if your box may have been a return, and the blade was missing.

Hi Thomas, yes absolutely ! you can break your dough into as many little balls as you wish for many pizzas... no rules... you can make as many as you wish. I hope this helps :-) and thanks for watching !

Is that a dough blade, or normal blade ? It isnt a dough hook,

It's the regular plastic blade that comes with all food processors. I've never seen a dough hook in a food processor before. This blade is the plastic one, and has 2 blades. Do NOT use the metal blade that comes with a food processor, it will just cut through the dough.

You could, Neapolitan style pizza crust has a super thin base, with a thicker crust. The edges of the dough should puff up and be airy in texture. I would encourage you to do a big of Googling for this type of specific dough, if you are looking for an authentic recipe for this style. That said, I have about 40 pizza videos here on KZbin, and I have a lot of different looks to the crust, maybe you'll find something interesting.

Hi there, I'm going to say "no" I'm assuming you are talking about the Ninja Storm blender. I'm not really familiar with it. IF it does say it can do dough, perhaps 1/2 the recipe and see how it goes. Something tells me it won't be able to handle it though.

Matty Hammond Hi Matty, this is enough dough to make 2 - 12" pizzas, it really depends on how much you roll out your dough. You can even make them larger if you go super thin. I can take this dough and make 4 nice sized smaller pizzas too, - it just depends on how you roll it. Try splitting the dough into 2 balls, and you'll see you get 2 niced sized pizzas. Hi Pual, Yes you can! Many of my pizza recipes here on KZbin use *olive* oil. In some circles it's considered a *must* to use olive oil. That said, many of my viewers don't have olive oil at home, so I tend to use things most have on-hand. I hope this helps and thanks for watching ! ( I have dozens more pizza videos here by the way )

I gave up trying to make dough in my Cuisinart... the dough would "climb" up the shaft under the blade and get inside of it, binding up the works and making a big mess. Then someone informed me to add the flour first, THEN the liquid! Problem solved.

Hi Char, well gotta give it to you ! you are 100% correct. I did add my water first. For some reason I was thinking about my Kitchen Aid food processor, as add the flour first. I had to whip through the video on my phone, and I didn't have a problem. I guess it's good to keep the same rule as the standmixer.
