She said POINT 6 percent, NOT 6 percent, so 0.6% not 6%, then you will have 100%+65%+1%+2%+0.6%=168.6%

877g and 1255g of flour? Why them amounts? Where did they come from? Why not, 500g, 1kg or 1250g? Saying, "let's call that", is not helpful when you don't explain, rounding off and dividing by 100. You said the batch will make 10 baguettes, how do you know? Cause an unbaked baguette weighs different from a baked baguette. The 168.6% figure you give, what do you do with it or how is it helpful with anything? This video is pretty useless and as clear as mud. P.S. you forgot the oil

Rounding is common in all math, it's not just her guessing. She explains dividing by 100 because your flour is 100% and the base of all your other ingredient percents, so they must each be divided by that 100%. This also tells you how much raw dough you need to bake a properly sized baguette; they do weigh different amounts and this is how you determine that difference. Expanding your basic baking knowledge would probably be best before you view this video and criticize the creator. Also there's no oil or fat in a baguette.
