Hi everyone! Just to clarify for those who are coming to this video that are not from America. This is an American style biscuit, which is very similar but slightly different from a scone. American biscuits typically call for buttermilk while scones typically use cream. Scones also often contain egg while American biscuits do not and biscuits also have a higher fat ratio which creates a more flaky texture. These are typically eaten as a side dish to a meal or slathered in sausage gravy for a meal on their own. What people in England (and some other parts of the world) call a "biscuit" is what Americans call a "cookie". Hope that helps!

@@jeanflavin1720 yes you can also add a tablespoon of white vinegar or lemon juice to your milk (better with full fat milk), stir and let that sit for about 10 minutes to create a buttermilk type substitute.

Have been baking professionally for years, and LOVE the step by step instruction that includes not only the "How"... but the "Why". You leave nothing to the imagination, and speak slowly and clearly enough to not overwhelm the beginning baker. I liked this a lot... nicely done.

I just want to thank you, these biscuits turned out perfect. I live in Florida, it is always to warm even though we are in November. To keep my ingredients cold, I freeze my butter, and grate my butter with a grater I also placed in the freezer while mixing my dry ingredients. While at it, I placed my measuring cup and buttermilk in freezer until I was ready to use. I also sifted my dry ingredients together. I was very happy with how beautiful they turned out!! Thank you😊❤

Oh my God. So....I have never made biscuits. Always been intimidated by baking in general. Biscuits especially as I've always heard it takes a while to get them right. So, this is the video I chose to go by, and holy crap on my first attempt, I made perfect buttermilk biscuits! PERFECT. Cookbook photo perfect. They tasted great. Fantastic. Made them just like a good restaurant. Reduced kosher salt by 1/4 tsp, butter by 1 tsp, and added 1 tbp of ACV to whole milk (fairlife since I’m lactose intolerant). Still came out perfect and tasty for savory biscuits.

I mean I was so bad at making biscuits that my mom used to make some and freeze them for my husband's birthday so he could enjoy home made biscuits! Spot on tutorial! And you didn't make the mistake that some folks do by twisting the cutter into the dough which can hamper rising and/or make a tougher biscuit--you made a straight cut. Great directions. ;)

Made these today with the listed yogurt substitute for buttermilk. Also used salted butter and skipped the separate salt requirement. I used a ground meat chopper tool (a different brand than “ChopStir”) in place of a pastry cutter to cut in the butter. Worked great! Lastly, I baked 1/2 on a buttered cast iron griddle and the other 1/2 in a casserole dish to compare results. The cast iron ones cooked quicker and looked “prettier,” but all of them turned out delicious! Can’t believe how easy these are. 😊

I just made your biscuit, they are the best i e tried to date! the only difference was mixing techniques. I put all ingredients on counter mix leaving out 1/4 cup flour for when i’m folding, and i do not mix i bring it together then fold. Thank you for this awesome recipe!

It sounds strange, but in a pinch you can also use plain yogurt, or make your own by adding teasp of white vinegar to the milk.

The few sites like Chef John's are the same basic ingredients but the site with the actual recipe is outdated or shut down. I also like the way you present the recipe. Straight forward but complete. I am a beginner who got tired of buying frozen and canned biscuits. I was having trouble with the rolling pin and was not getting the results I was hoping for. Now I know why. I've been watching loads of biscuit videos. Made several batches. They've been very good. Your video is excellent. I especially like the tall cooking pan so the biscuits don't fall over. I replaced the buttermilk with sour cream and my husband loved them. They were extremely soft on the inside. I added two tablespoons of raw sugar to the recipe and used extremely cold butter.

FAN-tastic video! I'll just reiterate how GENTLY to treat your dough! It's like when you're making dumplings: you can control how firm your dumplings are simply by how much you work your dough. If you treat dumplings too gently they can be so soft they'll fall apart in the stock/broth. Or you can work the dough harder and get tough dumplings that hold together well and IMO make better dumplings, especially for chicken and dumplings. But for these flaky biscuits the gentler the better! Thanks for this excellent biscuit video!

Hi sweetie I was finally less fearful of a disaster in my kitchen and so felt VERY INSPIRED TO MAKE THESE GREAT BISCUITS(which I WANTED TO MASTER FOR YRS. SO this BEAUTIFUL WINDY SUMMER NYC MORNING. I used mostly vegan organic ingredients like almond milk and avocado butter w/flax the results were Amazing super moist beautiful and very flaky I use vinegar since I didn’t have lemons and that’s the only thing it doesn’t really taste like butter milk no sure if IT WAS SUPPOSED TOO but THEY DO taste really good maybe I should’ve use more vinegar in my almond milk I have dairy allergies and lupus so they’re many ingredients I CANNOT CONSUME. PLEASE LET ME KNOW YOUR OPINION ON THIS MATTER .

Good video. You make it look easy. I've tried several biscuit recipes in the last week since we're all sheltering in place due to C-19. Everybody's grandmother's recipe is different. Not one of my attempt produced good biscuits. They were barely "fit to eat," as old folks say here in the South, even though I'm using the same ingredients as more successful biscuit makers. My wife says no matter which recipe I use, my biscuits always come out tasting like dry flour rather than biscuits

This is now my go-to biscuit recipe. I used Bettie's pastry method of flattening the cubes of butter with my fingers and tossing them in the flour. I pour most of the milk in, but (as my common practice), hold some back. While I'm mixing, I slowly add a little milk as needed to make sure I don't end up with soggy dough. Formed a shaggy, loose ball with my spatula and put the bowl with the dough in my freezer while the oven heated up. The result was tall and flaky biscuits.

It also really helps the biscuit in my two cents worth by how you cut it out. Using a biscuit cutter by simply pushing down, not twisting does the trick. I had to use a can when my cutter was “borrowed” but all I did was gently push down without twisting in any way.

I have made biscuits multiple times. And this are by far the best. One change I made was I used 1 stick of butter (8 Tbsp) instead of 6 for a nice buttery taste

Liked your presentation - all your utensils were present - didn't have to go & get them. Your ingredients were present, pre-measured and ready to use (didn't have to open any packets or containers etc. ). Enjoyed it.

I love this recipe so much! Tastes SOOOOOO GOOD! Made it by myself, I'm younger than 15, that just says for easy this is! And yes i did every single thing my self! My sub for buttermilk is a tbs of lemons and milk and sub for the soda is just more baking powder! :)

I am not a great baker but I thought, let me give these biscuits a try. Well, I made them tonight and oh my goodness, they turned out perfect. I didn’t have any buttermilk so I substituted milk with vinegar like you said and they turned out great. I can’t thank you enough for this tutorial.

My mom used to cut them in squares also, so no need to remix them, etc., however, I find they are so nice when made in circles, just a preference of mine.
