Jamaicans have been using this specific sweet potato to make what they call Pudding. They grate it adding a small amount of flour to bind ingredients, a small amount of the trash from the grated coconut, coconut milk, vanilla/nutmeg/brown sugar to taste, some people add raisins and bake. How you just described the recipe is exactly how my grandmother use to make it. I am first generation born in the US, but my mother is from the Bay Islands in the Caribbean, and I grew up eating this delicious treat. The way the brown sugar makes the edges so chewy is so good 👍🏽 We call it Potato Cake.

um, the orange ones aren't yams either, lol, the orange and the white are both sweet potatoes though the white variety is more common in Asia though the texture is different from the orange variety, both originate in the areas near Mexico . Yams are something completely different, not even the same family or plant, lol, and yams originate from Africa and Asia. The ONLY reason the orange sweet potatoes are called yams in North America is because of the slave trade, I'm not joking, the slaves saw the root and thought it looked similar to the root they had where they came from

Yup my mom puts yellow yam in hers with mix spices vanilla and she uses brown sugar. Coconut goes in grated and some cubes of coconut for chewing. She bakes it using 'Hell a top, Hell a bottom, hallelujah in the middle' as that makes it taste better. And her baking pot... yes pot... is layered with banana leaves instead of flour. Grew up on those. Took it to skl for lunch 😋 I will always think hers is the best. Been coaxing her to make it for us recently. 😊

As a type 1 diabetic, no I don't eat crap sugar. Many ways to sweeten a cake with almond flour and natural ways to sweeten. Sending you love and balance 💜 sometimes we say negative things but don't understand, it's something you need to look at yourself and figure that one out within ✨️ Just my opinion😊 48 yrs a diabetic is a hard ride. No. Clean some fresh sweet potatoes add poke all over with a sharp knife. Place on a plate, cover. Microwave on high for 4 minutes. Carefully turn all the potatoes over. Microwave for another 4 minutes. Let's set covered for a few minutes. Voila. Beautiful tasty roasted sweet potatoes, no added sugar salt fat.

This is a sweet potato - not the orange ones in North America called sweet yams or sweet potato. This is an old Jamaican dessert with some variation and it is not a cake. No mold is needed.

Unless you're using metric cups (if you're using millilitres you're using metric), in which case 250mL is 1 cup, so half a cup is 125mL.

@dantheman2907 the difference between metric cups and US cups is minimal. Roughly a .05 difference. Issue being, they will lose out on a large US audience just because many are confused/don't feel like doing conversions. Typically, if I'm baking, I'll stick to grams and mLs just for simplicity sake. Makes it a bit easier on handing out recipes as well.

You know, I think if you were to take the middle out of the sweet potatoes, but leave about a half inch of rind, then make the pudding mix and put the rind in the pan and then pour the pudding mix inside of the rind You could make them so you could carry them around and eat them outside sitting around the fire or something. As always, the sugar is for added sweetness. This is a special treat in most Caribbean countries and it's not eaten on a daily basis. Having some on a special occasion is harmless if it's done in moderation.
