➡️Ingredients and method
Dough preparation
All purpose flour 3 cups sifted or 360grams.
Yeast 1 and 1/2 Tsps.
Sugar 1 and 1/2 Tbsps .
Salt 1/2 Tsp.
Mix dry ingredients.
Egg 1 at room temperature.
Milk lukewarm 190ml or 1/2 cup and 3 Tbsps.
Knead dough for 5 to 7 minutes.
Oil 2 Tbsps.
Knead well. Grease bowl with oil and add dough, apply oil from above .
Cover and leave for rising till 2 to 3 times in volume. May take 1 hour in summer or 4 to 6 hours in winter.
Stuffing preparation
Clarified butter 2 to 3 Tbsps or 100grams.
Onion 1/2 medium size Chopped. Cook till whitish.
All purpose flour 1 Tbsp.
Cook for 2 to 3 minutes on low flame.
Milk 1/2 cup.
Chicken stock 1/2 cup.
Boiled shredded chicken 2 cups boiled with salt n garlic.
Green chillies chopped 2.
Chilli flakes 1 and 1/2 Tsp.
Black pepper powder 1 and 1/2 Tsp.
Salt 1 Tsp.
Cook for 3 to 4 minutes.
Soy sauce 1 Tbsp is optional.
Capsicum 1/4th cup.
Cook till moisture dry.
Check dough , knead again when volume is double or more .
Make balls and then long oval , cut the side with pizza cutter or knife.
Add stuffing and join as shown in video.
Apply egg yolk.
Sprinkle Black and white sesame seeds.
Cooking process
Preheat Shan gas tandoor, on low to medium flame for 5 to 7 minutes.
Then adjust tray on grill then place in Tandoor, cover and cook for 15 minutes on very low flame.
After 15minutes apply oil or butter on bread.
Cover again on very high flame with 95%
lid closed. And cook for 3 to 4 minutes till color appears.
Serve and enjoy.
3 Medium Size bread prepared.
