I’m not brave enough to try to trays! Heck I just figured out my oven using one tray. I do have double ovens so I may see how well the second oven bakes! Great tutorial !

I have double ovens, when I do 2 trays, my upper oven is 5 degrees higher than the lower one, but bake for the same amt of time.

I was just curious if you have ever used a convection oven and what your results have been. We just experiemented with your master recipe with pretty good results but ours don't have that nice domed top that yours do. Any thoughts on what might be doing wrong? I have everything together to try out my 1ST ever batch. I have researched & gathered all the tips I can. My egg yolks are aging and the whole 9.....The ONLY thing I haven't been able to get an in depth look at is different types of ovens and an agreeable temperature. I have an electric oven (don't know if that matters but airing on the side of caution) WHAT TEMPERATURE IS BEST?

What are your racks position? Is the top one @ the 1st or 2nd? and 2nd rack is at lowest/ last position or 2nd to last? Thanks

Sadly, this is typical with silicone mats. you could try to raise the oven temperature a bit or mix your batter less to see if that helps
