Every piece of pop culture is predictable at this point where there are so many authors exploring the same genres at the same time. Everything is just a variation of previous plot. But that doesn't matter, if there's a deeper layer beneath the plot and choreography. An original idea and its manifestation through various means, art, narrative. When they work together, you instantly get a variety of new things put together. Yes, Baki has already shown us those moves, but now he is clashing with the whole new world of sumo. And we see the reaction of a completely new character, his thoughts and his response. Now it's all different, even though it starts the same. It's the same in fighting. Even though you have only two fists and two legs, you can still do thousands of moves that are all different with them. And you can repeat the same scenes, but make a whole new story with them. So, you may quit, and nobody would miss you. But Baki is managing to output some new story, better than many other mangas with tons of useless characters doing something unpredictable, yet somehow still boring because it's out of blue and forced.

If you look at whats actually happening, baki is stretching. He kicked with both legs, did a flip and did back stretches after a brief leap. Hes not fighting here, which is way more apparent in the second fight.
