Usually Baking soda used to get crispy dosa ( baking soda is alkaline,it reacts with the acid in the batter and reduces acidity)

You can make with out baking powder as well,beating of egg and sugar should be done properly, folding of flour in the end should be gentle.

If batter becomes too sour adding some baking soda will reduce excess sourness by reacting with acidity in the batter.

I think I have explained that in the video however in recipes where the amount of leavening effect produced by acid and baking soda combination is not sufficient, baking powder is also added.
