Kacchi biriyani is when the meat is not cooked separately but it's put in raw with the rice and cooked in the steam of it together! Hence the term "kacchi" that comes from kacha meaning raw 😁

We use haji as title who perform hajj is saudi arabia. Haji birani means probably the owner of the shop is haji. In Kachchi birani.. the meat is mixed with rice Kachcha, means not boiled.. the sealed the pot and made birani by steam...

I cook biryani with about 1/3 the oil used here. The trick is to finely slice the onions and fry them in batches. Once you add the rice, add about a teaspoon of ghee/clarified butter. The rice is fried with the spices so the grains don't stick when the rice is cooked. However, I am aware that cooking styles vary from person to person. Cheers!

Kachhi- in Hindi/Urdu means kacha- raw, its called kachhi biriyani because its cooked with raw meat, not like here as the meat is fried and cooked first, in kachhi the raw marinated meat is placed in layers of the rice and the lid is closed with flour dough so the meat is cooked inside on steam, the meat releases juice inside and its absorbed in the rice, that's how its different. And its only made with goat meat.

Can I share a tip?.. you need to measure rice and water (double) using same cup.. for example if you use 2 cup rice.. take 4 cup water for bringing into boil..if you want to add sour yogurt then reduce the amount of water. Hope that helps.🥰

basic different between kacchi and biryani is processing of cook. when you are cooking biryani you have to beat up spoon constantly . but when you made kacchi you have no chance to beat up, you should bake it in low hit 2 to 2:30 hours. and there has another basic different among kacci, biryani and tehari, that is the usig of meat . kacci- goat meat. biryani-chicken. tehari-beef. rather there has some basic technique of processing of food. sometimes spices can vary .

That shada shada maaa is called - khashi :3 (goat) And biriyani of khashi is called kacchi . Origin lesson - people of puran dhaka (old dhaka ) call khashi as kacchi. And biriyani is mainly an traditional food of old dhaka

"Kacchi biriyani" is made by mutton with bashmoti rice.In this biriyani, marinated raw mutton used with half boiled rice in a pod and keep it with very low flame of stove for 2 hours(approximately). Haji is a title of the person who finished "Hajj" from baitullah sarif(mecca and madina).In dhaka Haji biriyani is a popular and traditional famous biriyani which is named after a chef which title was haji.
