Wow, I’m a vegetarian and I still think this dish looks delicious! My husband and children do eat meat, though, so they’d like this very much. We do not have good mutton where I live, but we do have a good butcher with organic beef short ribs that I think might work well in this dish. I will give this a try when my children are home from college. Thanks for such a nice recipe.

The second way is the way I make Kachchi Biryani. However, I bake it in the oven. If you do, you need the take the dish out half way through and keep some of the uncooked juice aside, mix it with some water and then add it to the side of the pan to stop the rice on the outside from burning/cooking more than the rice on the inside.

I do wonder about the second recipe, I have never seen powdered milk and milk being used so. Also, ketchup? Did make the first recipe and it was the best biryani I had. Maybe cut down on the garam masala in the marinade.

Good . Two big mistake in first half . One never ever through shahi zehra . It’s extremely exotic spice. It’s called shahi zehra (royal zeera) . You should add in meat if you don’t know how to dealt with rice. Second basmati should be longest grain (extra long ) .

Please don’t call it the best kacchi. Cause the authentic Bangladeshi kacchi uses Kalijeera or chinigura rice that is highly aromatic, not basmati that doesn’t have any flavor. When you are representing Bangladeshi cuisine to the world, you should be a little careful to not spread the wrong message. Else everyone’s gonna believe that this is what authentic Bangladeshi kacchi biriyani looks and tastes like, but the truth is to master the authentic Bangladeshi kacchi biriyani is not everyone’s cup of tea. Only experienced kacchi chefs who is been doing it for decades can bring the authentic flavor and taste.

Its very hard to find Kalijeera rice outside Bangladesh. So for us living abroad we will have to make it with basmati rice. This video is highly appreciated🙏🏽 Also I believe Kalijeera rice is expensive so why not try out with a different rice🙂

@@shantiii nobody is saying you can not use basmati in the west as a modification, but when you are giving out the recipe in a youtube channel as kacchi biriyani which is in fact a Bangladeshi dish and has been made always with chinigura or kalijeera rice, it should at least try to keep the authentic version or mention this very important fact cause makes a huge flavor profile change of the dish, especially with the caption as best kacchi biriyani, which undoubtedly is not the best kacchi biriyani. And this is a direct representation of my cuisine in an international platform, and if done wrong the world might have a different message. Already in a lot of videos and comments I have seen people from other south asian countries shunning the traditional recipes stating why they are not using basmati since that to their perception is the go to rice for biriyani. And also calling the people who uses kalijeera and chinigura as poor who can’t buy basmati (how ridiculous is that!) where in reality these rice versions are the superior rice grains that not only costs more but also makes kacchi biriyani what it is.

For weddings and feasts, i have seen kacchi being made using basmati plenty of times from when i was young. Basmati is an occasional rice, not an everyday one, as is chinigura you are acting as if basmati for kachhi is banned in bangladesh.

I find this obsession with basmati strange. Dont get me wrong Basmati is good, but not everything is made with basmati. Try making biryani with small grain rice, thats even better than Basmati. Maybe try Gopalbhog to start with.
