what you got were chuck short ribs which are slightly smaller and are 4 bones...Bar A BBQ used Plate Short ribs which are around 12'' in length and 3 bones...

Yes, Creekstone Farms didn't have any options for their beef ribs, just "Short Ribs." Im wishing I would have just went to my butcher... Woulda' saved a few bucks as well.

What you did is exactly what I would have done. I am glad you take us on your own learning and trying journey. The outcome is only limited by your skill (and you did fantastic) not necessarily by that exact butcher. There are fantastic butchers everywhere. I also want to add I love BBQ, but I am glad you don't feel the need to bash on vegans, that seems unnecessary to be honest :-) ​@@BallisticBBQ

Cold smoking is around 60 to 70 degrees F or even less. It's for cured meat like bacon salami salted fish and ham in a smokehouse not fresh meat. But the ribs look fantastic.❤

That smoke ring was off the charts! Ribs were very fatty.

Creekstone will only sell 4 bone short ribs to the average consumer. I believe they keep the bigger ribs for the businesses. I stop buying my ribs from them. I only by 3 bone beef ribs from 44 farms or Chatel farms. 44 steaks are Angus and Chatel is Akaushi Wagyu. Great video!

I haven't tried overnight cooks yet, but I might have to give it a shot one of these days. Making great BBQ AND getting a good night's rest... that's the dream. I don't have a pellet grill, but I can probably make it work on the kamado or the smokey mountain.

I achieve the same results on my PittBoss Titan pellet grill. I cook mine like brisket. At 225° straight thru the cook. 10 to 12 hours. When the fat starts rendering, I wrap in butcher paper with beef tallow. Then rest them in 150° warmer for 6 hours. And they are off the charts delicious. Your beef ribs looked dam good. 👍👍👍

As contrary as it sounds, the smoke ring isn't dependant on how much smoke there is. As long as you have CO2 and Nitric oxide gasses present in the cook chamber, you'll get a ring, as they bind with the myoglobin in the meat, fixing the colour before it turns brown at about 160f.

I got a dino rib from Black's in Lockhart Texas and it was as tough as a boot. I couldn't eat the thing and should have complained.

Creekstone is available locally here in the Nashville area. I like the 3 bone plate rib a bit better.. but both are great.

If the choice was just one smoker, I'd go with the LSG offset cabinet. I like the small footprint for a cooker that can do 9 briskets. But, I can't think of a better built pellet grill! Cheers!

There are two different cuts of short ribs. The 4 bone ribs are shorter, the 3 bone ribs are longer. Those are much harder to get, here in New England the only place I've found that sells them is Restaurant Depot, and they don't get many. Just 2-3 Cryo packs each day.

You can put a soup can and a rock on any other smoke and presto, damper. Do it to my Yoder sometimes depending on what I’m doing.

Hickory pellets and no chips on this cook. Simply because I didn't have enough.

I saw the same video. It's cool he doesn't claim some secret spice or recipe. Are you still using the wood chips in this pellet smoker? Great turnout even if you got shorted on the short ribs

I do still use wood chips, but on this cook I only had hickory pellets. Main reason is I didn't have any chips!

They are shorter because they are short ribs… not plate ribs.

@@BallisticBBQNo worries. You present yourself honestly, and did a fine gig with those ribs. Sometimes… more like OFTEN the 3 bone plate ribs are hard to source. I’d speak with Jeremy Yoder (Mad Scientist BBQ) as he plays with them a lot.
