Just in case you're wondering from someone that's cooked in a lot of bars use a 50/50 peanut oil and vegetable oil blend. Also if you want fair style onion rings use a cup of pancake mix, one egg, and add water till it's a honey like consistency. That should get you through one large onion. It's also good for deep fried candy. This is a one step wet batter so it's gonna make your oil messy fast.

@@morrigankasa570 you're absolutely right, my grandmother has a doughnut recipe that calls for frying the doughnuts in either specifically leaf lard from a hog or bear lard. Unfortunately it's against common food code to fry in animal fat any more unless you've got special permissions. Closest you'll come to getting anything fried in fat at a restaurant now is getting your hash browns or eggs fried in the bacon grease.

@@lukasg4807 Yes. It's a countertop convection oven in function. You can't do the exact same things in it at all as a pot of hot fat. Air fryers are only good for frozen foods and that's about it. They cook fast, so that's a positive worth mentioning. There's a better tasting way to cook anything else you could imagine sticking in there though.

We don't all have that accent. I'm a midwestern city slicker. 30 minutes from me, once you leave the metro area, there are more cows than people. There is a Walmart and a Fleet Farm where the average customer is about 75 YO, wears wide suspenders on his jeans, whote socks, black shoes. They all say "warsch" instead of "wash," and have the accent Charlie sometimes exaggerates.

As someone from the south, where deep frying is both a sport and a food group, some things, like onion rings, will fare better if you run them through the dry FIRST, then let them sit in the egg wash for a minute and then in the dry mix again. Then, if you want it to stick good, bread them all and put in the freezer for 20 minutes. Things like fish and shrimp don't need that but things with a smoother exterior - onions, cheeses, etc- the freezing will cause it to make more of a shell that won't half disintegrate when you drop in the oil.

Charlie is really good at staying in character. If you have 20 minutes, look up his commencement speech at his alma mater, University of Wisconsin, Madison. He remains in character for the first five minutes or so and then becomes more serious. He gives a great commencement speech.

It's a breading mix for fish or chicken. Not beer batter but breading. Like flavored flour basically. The Cajun one does have Cajun seasoning in it. Original is just plain. Actually I was curious after typing this out so I went and looked and shore lunch is a mix of wheat flour, shortening, yellow corn meal, potato flour, and seasonings.

Yeah, we don't have these in Texas. Traveled there a lot on paper mill business. Love the cheese curds. Think mozzarella cheese. Now, in some grocery stores, such as Brookshire's (East Texas) they'll also have "fresh" mozzarella cheese in a big lump. Might have a little juice in it. Cheese curds are a smaller version of that, about the size of your ring finger up to the hand end of your fingernail. "Squeaky" means they are still wet, as in "squeaky clean". But not soupy like cottage cheese. Not squeaky means they are more dried out, like a mozzarella cheese stick.
