Best to use winch grease (not too much) and sewing machine oil for the pawls. Useful video.

Put your winches into an appropriate size bucket and work down from the top when you disassemble them. Much easier to keep track of stray pawl springs. And use a bucket with the bottom cut out to service winches in place on the boat. Easy peasy.

These Barient winches seem to be ok but i definitely would like to have some self tailoring ones.

Self tailing is definitely the way to go if you can afford it. Did you figure out your winch issue? Sorry, I don't check these videos for comments much.

I have a 10 that the drum will not come off.. it spins but no go on the removal.

On the 10p what if the 3/16 Allen just spins without coming off?

That is a really great question. And, mine came with one. I would say look for a winch key and go from there. Not all winches need one either
