Barilla Open Carbonara | A Short film

Carbonara is one of the most loved pasta dishes in the world.
Spaghetti, Guanciale, Roman pecorino cheese, eggs and pepper: 5 ingredients that conquered many palates. But whether for health conditions, culture or personal choices, the recipe that everyone loves cannot be enjoyed by everyone. That’s why this year Barilla will celebrate #CarbonaraDay with an alternative carbonara recipe that even more of us can enjoy.
Inspired by a true story, together with the chefs Marco Martini, Asma Khan, Giulia Tomelleri, Jasmine Guetta & Manuel Kanah, and Victoire Gouloubi, we created the “Open Carbonara”, a dish inspired by the classic, but Halal, Kosher, Vegan, lactose free and gluten free. This #CarbonaraDay many more people can have a seat at the same table and enjoy alternative takes on the Italian pasta dish.
This is only the beginning of a cross cultural and diverse project: The “Open Recipes” platform. This platform was developed to help more of our community to come together. “Open recipes” will feature hundreds of pasta recipes suitable for various diets, and will continue to be developed to cater for as many people as we can.

Oh wow, this is such a beautiful initiative.🙏🏽🙏🏽🙏🏽 Two of my close friends are Italian and I love how they make vegetarian versions of traditional dishes for me. I absolutely love everything Italian, from food to fashion to music. I play Italian music when I cook because I swear there's something magical about it that makes food taste so good. Of course here in Melbourne we are so blessed with its multicultural community so much that it's easier to find vegetarian/vegan/any other versions of traditional dishes (Arabic, Persian, African, Asian, Native, Latin etc) at restaurants or people are generally so accommodating and thoughtful when hosting. There's nothing like food to connect people in a wholesome way and dissolve any differences. 🤗💞

Why you just didnt invent a new meal? Why you need to call it carbonara when its not ??? If this recipe is so good and so inclusive just name it differently dont use the glory of an other dish. Hi Gaspard. We called it Open Carbonara because it takes inspiration from the traditional recipe! A team of international chefs coming from different backgrounds put their heads together and used specific ingredients chosen to recreate the look and the flavour of the dish, while making it more accessible. The purpose is not to replace the original recipe of course, but to offer a new alternative that could get more people closer to a dish they never had the chance to enjoy, due to specific needs or intolerances. We also created the Open Recipes platform, which allows people to choose their favourite Italian pasta dish, select their food preference and find the specific variation that works for them. Thank you SO much for this video, Barilla. My best friend sent me this because she knew how much it would mean to me. The moment the little girl said "Because Gabriele can't eat it" I cried. Because that's literally me: Gabrielle, having a celiac disease diagnosis since I was 10 and the last 2 years going fully vegan. That's 16 years dealing with a restrict diet. It's hard not just because of the food itself, but because people don't understand. They don't understand what we go trough and don't even try to understand what we feel, they only judge us. While I usually feel left outside, seeing how you really care for inclusion and creating a sense of community in the video made me so happy, because it's not usual. I feel so heartwarming. per Barilla il rispetto della diversità consiste nello snaturare una ricetta italiana per accontentare le altre categorie e illuderle di essere «incluse», perché sulla carta stanno mangiando un piatto che non ha nulla della ricetta originale: ma hey, ha conservato il nome e un accenno vago di sembianza, quindi deve essere per forza carbonara, sorridete tutti. Storicamente la carbonara è un piatto recente. Qualsiasi sia la sua origine (ce ne sono diverse) si tratta comunque di una derivazione. La cucina è quasi sempre stata derivata in un modo o nell'altro: gran parte dei piatti tipici italiani non esisterebbe se non avessimo avuto influenze storiche dal resto del mondo. Nel solo specifico caso della carbonara da anni esiste la carbonara di mare. In ogni caso ho sempre difficoltà a capire questi dibattiti perché in ogni caso non si sta togliendo nulla, ma si sta aggiungendo. Nessuno mette al bando la classica carbonara, ma si dà modo a chi non può mangiare la classica (per questioni religiose, etiche o di salute) di avere un'opzione nuova. E' la stessa cosa per la pasta gluten-free. Non sono celiaca. Continuerò a mangiare la pasta "normale". Ma sono contenta che le persone abbiano nuove opzioni per mangiare la pasta (che sia semplicemente gluten-free o di lenticchie). Qual è il problema nell'aggiungere risorse?

We just need the "open carbonara", we really felt the need, given the now widespread trend of crippling and distorting traditional Italian recipes. I rather wonder why call it "carbonara" and put anything not included in the original recipe in the pan.

Hi! the name Open Carbonara has been chosen because it takes inspiration from the traditional recipe. A team of international chefs from different backgrounds put their heads together and used specific ingredients chosen to recreate the look and the flavour of the dish, while making it more accessible. The purpose is not to replace the original one, but to offer a new alternative that could get more people closer to a recipe they never had the chance to enjoy, due to food intolerances for example.

I always loved and bought your pasta and I have been a loyal customer through years from my first years with minestrone of my calabrese grand mother from San Giovanni in fiore to the buccatini (I could eat an entire pack - 500g - when I was student) and the fusilli I nowadays serve to my children, but basta for me. I 'll choose De Cecco or Rummo instead. I don't support a brand that supports cancelation of our roots and replacement of our cultures.
