The last time I brewed an IPA I tested letting it sit in the keg for longer and then doing another smaller dry addition before drinking, It allowed the beer to mature and also had the pungent aroma and juicy flavor of a more fresh beer. Great to see videos again, glad to see things are well! Cheers If I don't see yah... 🙂

I guess wild yeast can be tricky. I've never tried it myself. You did get something though since the gravity did go down. Maybe it should have sat for another couple of weeks slow fermenting?

Sometimes a brew day just goes so wrong, that at the end of it there's just a need to step away. Also, fatherhood certainly put a stop to my brewing at home. Now all my equipment is at a friend's and I brew with him where I can.
