Partly because you want a wedge for limes to squeeze the juice, and a lemon is usually a little too big to cut it into wedges. Ultimately the establishment will specify how they want them cut and should cover that in the first few days of training whenever you get hired. :)

I don't see why all places don't get that tool. I can't imagine it being more then $5 and it makes the drink's aesthetics really good. Half the drink is how it looks in my opinion.

Not the typical lemon twist. A lot of people do not even know how to make the twist and usually just put a wedge. Higher end places have the tool that peels the skin off the lemon in the circular twist fashion.

It just depends on the bar...some places are so busy that it doesn't matter, people just want their drinks, ultimately that's all they ever want. I agree presentation is a plus, but if all it does is get in the way of business by slowing the process down, it's not going to be utilized.

I've had this boss who completely told me the wrong stuff, granted, he isn't a "bartender" but know some stuff. He almost never twists the peel of the drink and then he just tries to twist it enough so he can hang it on the side of the glass, and it almost always falls off! thanks for the help. Prove him wrong next time! Great videos!

How come you have to cut the lime differently to the lemon? I've was taught to do it the way you have shown but I've never known why. These videos are great! I've watched all of them a few times and they have really inspired me (especially the Alcohols videos) to learn more about the drinks that I make... I'm from the UK but my dream is to travel around the US as a bartender, do you have any advice of where would be best to start in the US? I've been bartender altogether for about 3 years now

Careful telling your boss off!! Take note of his technique and ask if that is how they want their twists presented. If not, offer a glimpse at your technique NICELY...either way, he probably won't care.
