Another way to achieve the stop motion look while still working in comps of higher frame rates is to apply the "Posterize Time" effect. It will allow you to change the frame rate of individual layers within the comp, which also lets you play around with using multiple frame rates as contrasting elements. Like, having the background animate in 15fps while the subject is in 30fps for example.
