There are two main types of basil used in Thai cooking. The one shown in this video is called “horapha”, sometimes called Thai sweet basil in English. The other is called “kapraow”, which is the one that is commonly called “holy basil”. They are quite different in appearance and taste. Outside of Thailand, Thai sweet basil is much more common. Dishes such as chicken fried basil (kai phad kapraow) are supposed to use Holy basil but most restaurants here substitute Thai sweet basil or even Italian basil, since they are much easier to obtain, and most people who are not Thai don’t know the difference.

The Thai word for galangal is actually “kha”, as in “tom kha kai”
