From a design standpoint, it's probably because it would not be worth the time and effort of implementing them. THe biggest issue is that Batman is a beefy guy and the arms would obscure things visually. People in VR like to be able to see their surroundings. It looks dumb in videos to have Rayman hands, but in gameplay it makes things way easier and smoother to play. Also in a gameplay you can't control if people decide to stand or crouch or sit down. VR gear doesn't tend to track torso or elbows so there is no way to tell what position someone's body is in. How can you tell if someone is crouching or if they are just short? It would have to be simulated and tested extensively and its probably too expensive for such a short game. In the mirror it's less of an issue because they purposefully place the mirror in areas with constraints. You have to be standing and facing a single direction to look in the mirror so the torso will always be upright and facing the mirror. Also there are no objects around Batman for his body to interact with.

It still connects to a computer, so generally it's done through some form of recording software like Fraps, as you would with a normal game. This is on Playstation, so I think this is their built-in recording system.
