Was there a way to prime grenades in this version of the game? I am 90% sure that Frontline on the Playstation it was possible to start the countdown before throwing a grenade but I've not seen the player do that once in the vids I've watched so far.

There was no way, as far as I remember, in Allied Assault. In Spearhead and Breakthrough, I reckon they started ticking as soon as you clicked the fire button - hold to cook, just don't try hatching it :D

Good observation! In Allied Assault the only way to time the grenade's explosion was to increase the travel time by lofting or banking it to the target.
