Brioche bun for burgers (diameter 16 cm):
Flour - 225 g;
Ghee - 50 g;
Warm water - 75 g;
Milk - 25 g;
Dry yeast - 3.5 g;
Sugar - 14 g;
Salt - 3 g;
Egg - 1 piece.
Pour dry yeast into warm water, add a little sugar. Stir, cover with a napkin and leave in a warm place for 20 minutes until bubbles appear. Add ghee, milk, sugar, salt, egg and yeast water to the flour. We knead the dough and send it to a warm place for an hour. Divide the dough into 2 parts, form buns and leave in a warm place under a towel for 40 minutes. Brush the bun with egg mass (egg + milk) and bake for 15 minutes at a temperature of 180°C.
Burger patties.
Beef - 800 g;
Lamb fat - 160 g;
Salt and pepper.
Chop the meat and kurdyuk with a knife and add spices. Form patties with a diameter of 18 cm and send to the freezer for 40 minutes. Fry on the grill. We recommend bringing the internal temperature of ground beef dishes to at least 160°F (71°C).
Caramelized onions:
Onion - 0.5 kg;
