I remember eating raw eggs my mom mixed in chocolate shakes. It was never considered "dangerous" until the USDA deemed it so years later. Of course, here in America, Lord only knows what is done to them before they end up in the grocery store. Your recipe looks scrumptious!

Is it safe to eat raw eggs these days?? As in custard ,Would heating the milk to a higher temperature cook the egg mixture as in custard?

If i cook down cranberries to add to this, would I need to increase the amount of gelatin I add?

Sorry for the late reply. I never tried to add cranberries to the recipe, but I think it would be better to prepare the Bavarian cream regarding the original recipe serve with a cranberry compote or sauce. That would be delicious.

No need to add gelatin fruits like blueberries and cranberries release pectin when heated .Which is like nature’s gelatin.

That is right, I am using very fresh, organic, pasture raised eggs. Using raw eggs is in the European cuisine pretty popular. But you can cook the egg/sugar mixture in a double boiler if you are concerned.

In USA we are not sure we r getting organic pasture raise chicken eggs, so it’s safer to cook it. I do love the European pastries a lot more. It Reminds me of home.

@@novastellavoid I’m German and we eat a lot of raw eggs because they are fresh especially in Bavaria where there are a lot of farms. In America it’s more dangerous because of unhealthy state they keep the hens in and how long they’re kept on the shelf. I have backyard chickens for this reason because the eggs in Australia (where I currently reside) are from chickens pumped full of antibiotics and hormones. It’s disgusting.
