You will hear extended versions of these basic chords on the track... as is common in jazz of course :)
In theory, you can play Bb major scale over all the chords, except the G7 where you'd switch to C harmonic minor.
Scales:
Bb major - Bb C D Eb F G A
C harmonic minor - C D Eb F G Ab B
Playing Bb major scale will result in Bb ionian (Bb chords), C dorian (Cm7 chords) and F mixolydian (F7 chords) - all the same 7 notes...
NOTE: It's only a two note difference between Bb major scale and C harmonic minor scale - as the Bb becomes a B natural and the A becomes Ab - the rest of the 7 notes stay the same.... easy!
You can also use Bb major pentatonic scale - Bb C D F G
(you could think good old G minor pentatonic as it's the same 5 notes!)
Next up, I'd recommend trying out some more advanced colours on the dominant chord (F7/F13) by using the
F diminished 1/2-1 tone scale = F Gb Ab A B C D Eb
And you can also try out the G altered scale (superlocrian) on G7!

G7 arpeggio = G B D F
Cm7 arpeggio = C Eb G Bb
F7 arpeggio = F A C Eb
