When I do chicken thighs like this I actually do use the spg I throw on a brisket. It’s peppery yes but everyone loves it and that way of seasoning gets the most compliments from people

Looks great! Would love to see your interpretation on lamb with cumin. The most popular across China and the middle east (and now popular in Australia too) is lamb skewers (normally small cubes of lamb shoulder with the odd cube or two of lamb fat) with a cumin/chili rub. I've tried similar with lamb loin chops that have come out really well. Been thinking about possibly trying lamb shanks on a smoker or direct heat grill however I'm without a bbq at the moment.

I still like the original crispy skin thighs. I’m branching out to use them in gyro or shawarma. So crispy, so tender, so tasty. My girls like it as teriyaki chicken over rice. It’s just so easy. “ Dad when are you making your chicken “ I hear weekly. It’s so versatile. And I’m doing the on a gas Weber! I can’t recommend it enough. 10 out of 10 I highly recommend. I've always loved Whataburger's Buffalo Ranch Chicken Finger sandwich, but this is next level. I've made something similar with pan-seared breasts, just without the pickle. It was very good; however, using crispy-skin thighs would definitely put it over the top.

I have one way that MIGHT make it better but is over kill. Do everything you did up to saucing it, toss it in some seasoned wonder flour, quick hard fry for crust, then toss as a buffalo or use the oil for a Nashville hot. Definitely making what you did very soon though 😂 looks amazing

Bradley ... I don't know how to explain this to you but I'll try. Sandwich looks amazing but try to cut it in the middle and put a wooden skewer through each side and toast the cross section on a grill and get grill marks on the cross section. You'll thank me later .... :)
