T-bone and Porterhouse are basically the same. Fillet on one side NY strip (a sirloin but from higher up the loin so more tender)on the other. A porterhouse usually has a larger amount of fillet than a T-bone and is sometimes thicker cut.

Something I tried was to part cook the meat in the oven to 35 c on a preheated skillet or heat proof pan with baking paper and foil,oven needs to be at gas mark 2 or 135 degrees c,don’t forget to season before cooking,then finish on the stove to desired temperature,good luck and congratulations on your vlog it’s brilliant.

You guys are doing something cool here, don’t change a thing! James, If you haven’t got one already, get yourself a Thermapen meat thermometer, not cheap but just the best there is and super accurate. It’s Hard to cook a steak with a big bone in it like that too, reverse sear definitely the way to go, just needed a few more minutes before the sear, I’ve done the same thing with bone in beef. Looked bloody good though! Looking forward to round two!
