Happy Holidays y'all! I hope you enjoy this video -- I was thinking this would make for a great New Years Day feast -- but feel free to use it for a special holiday, anniversary or birthday celebration. I used a beef tenderloin, but you could try this technique with any large piece of meat that you would eat at medium rare. For the beef tenderloin, I smoked it first to an internal temp of 120-123 and then later grilled off right before serving. You could smoke it the day before, chill it down, and then temper and grill off another day. (Makes entertaining easier to be semi-prepped). Enjoy!

Thanks, bunches, for that cut of beef recipe. I'll be trying that one soon. The black eyed peas was a bonus and basically my exact recipe. I have a habit of doing the peas in a crock pot. It's a great way to have long and slow cooked food on extremely busy days. Lastly, we think alike on the application of fire, choice of wood, and application of smoke. Happy Holidays 🤘😎✌️

What is the temp probe that he was using? It did not look like the standard ThermoWorks probes, it looked like the wire was covered or had a silicone cover on it, not a bare wire.
