I am very disappointed with all of the negative comments I have read about this video. I found this to be a perfectly delightful and representative experience of three people working together on a recipe. And then there are those who claim to know more than Julia and Jacques about the proper way to prepare this sauce. I really have to laugh at that, I mean, it's just too funny. Julia and Jacques were trained in the very essence of classical French cooking ... in France ... by French chefs. I would be far more inclined to question the methods by which the neysayers in these comments arrived at their conclusions. Great video Martha, and thanks for sharing it with us!

DATo DATonian I wish I could like your video more than once. I agree with you 100%. This is a delightful video. Yet again people trying to find shade when there isn’t any. This is just a portrayal of three fantastic chefs sharing ideas and recipes and let’s be thankful for that. Critics need to take several seats, they are not interested in the cooking, only here for the so called drama and that is sad.

my friend it is a well known fact around the world in cooking circles that Americans can't cook, you think you can, but you certainly cannot. a bernaise is not made by adding lumps of soft butter to a sabayon, what you have witnessed is a blend of two techniques which resulted in nothing. this started out with the reduction, the yolks were added to form the sabayon, then they changed tracks and added the lumps of soft butter as if they were making a sauce called a "beurre blanc" i know what i am talking about, i trained under french chefs and am not 180 years old.

+Jordan Stewart Though you could feel tension in all of them (least in Julia -the grand dame), I thought Martha did a great job here. She was hosting two legendary chefs. She is excellent at her craft(s)- but they were her guests. She didn't take over, push, or throw her ideas in. Actually, I think it was an excellent segment with her as host.

TV cook shows were so new back then-- and no internet. Today's Bearnaise uses clarified butter and sweat the onions: reduce, emulsify, and whisk in clarified butter. Love these chef icons and pioneers. Much respect.

When I was a child, I would watch her cooking shows on PBS. What a wonderful woman. There was another program I'd watch and it was a Cajun cooking show but can't remember his name. And of course Benny Hill-had to sneak to watch him.

You are one of the few people to get this. Some recipes are broadly good tasting to a lot of people. But people's taste is different. What tastes wonderful to one doesn't to another. You cook what your family and you like. It's like the cooking competition shows. Someone will cook wonderful food that they like and then some jerky judge will act like it wasn't successful and tastes bad. It was successful because the person who cooked it liked it! And it's not wrong because they didn't like it. Cooking shouldn't be judged. Cook what you like.
