Beat the Heat: 3 Scrumptious Summer Salads You Can't Resist!
Cracked Out Corn Salad
2 10 oz Bags Frozen Corn
5 sliced bacon, cooked and chopped
1.5 Cups Shredded Cheddar Cheese
1/2 cup ranch
1/4 cup chopped green onion
Salt & Pepper to Taste
Directions: Cook corn is using frozen and let cool completely. In medium mixing bowl, add cooled corn, ranch, chopped bacon, cheese (saving some for top), green onion (saving some for top), and salt and pepper. Stir well. Garnish with remaining cheese and green onion. Refrigerate for at least 1 hour before serving.
Dill Pickle Pasta Salad
16 oz Rotini Pasta
2 cups chopped Dill Pickles (we used sliced pickle chips, chopped)
8 oz Colby Jack cheese, cubed
1 Small white onion, finely chopped
1 cup Mayo
1/2-1 cup Sour Cream
1/3 cup (or more) pickle juice
2 tbsp Fresh chopped Dill
OR 1 tbsp dried Dill
*OR Fork King Good Dill Pickle Seasoning

Pepper to Taste
Directions: Boil rotini according to package directions. Drain and rinse. To pasta add pickle juice and set aside. Prepare dressing by mixing mayo, sour cream, and seasonings. Pour over pasta. Add chopped pickles, onion, and cubed cheese. Toss to combine. Refrigerate at least 1-2 hours before serving, Serve cold.
Mini Pepper Salad
6 Mini Sweet Peppers, sliced thinly
1 Cucumber, sliced and halved
1-2 tbsp Chili Onion Crunch (Correct product is LINKED BELOW!)
1/4 cup - 1/2 cup Makato Ginger Dressing
Everything Bagel Seasoning
Combine all ingredients in bowl. Stir to combine. Serve immediatley or store in fridge until time to serve.

I’ve made the pickle pasta salad but it was just pasta, pickles and sharp cheddar cheese cubes. So good! I love pickles (currently heading to Amazon to buy that seasoning!)

YUM to all those summer salads!!!! Growing up my Mom and Grandmother always brought Potato Salad, 3 bean Salad, and Cole slaw and of course Mamaw Lillie’s banana pudding trifle. That was their go to’s. 3 bean salad was never my thing but I’ve been thinking of doing a modern day spin on it and seeing what I can come up with. Something new and fresh but still paying homage to my heritage of the 3 bean salad. When I started thinking about this I had the tv on and there was a show talking about beans and how dried beans fresh instead of years old makes a difference so I found their website and ordered some of their dried beans. As soon as the beans are delivered I’m going to get to working on a modern day bean salad for this summer’s family get togethers.❤

I bet that the corn salad would also be good if you use the fiesta type corn with bell pepper; and the cucumber salad would be great with added shrimp or on a sandwich like a Bánh mì or sub sandwich. Very interested salads. I would love the corn salad and the cucumber and pepper one is questionable but looks good! I don't like spice much but my husband doesn't like cucumber. We are camping this weekend and I am doing a cookout at our campsite for my hubby for father's day. I hope to have people there to share the food. I'm already thinking about some yummy dishes!!

My daughter’s favorite pasta salad is one that my mom found years ago. It’s a little bit like the dill pickle salad but not so intensely dill. It’s made with pasta, cheese, ham, dill pickles and pineapple tidbits. I think the original dressing had more ingredients but I just use mayonnaise thinned with pineapple juice. Delish!

I make a version of the pickle salad and it has always been my favorite I use the rotini noodles with pickles and I add black olives, cucumber and sometimes tomatoes “cuz I have some picky eaters” then my dressing is mayo, pickle juice, salt and pepper..I could eat it for days..if you like spicy my husband used to add a bit of cayenne..I’ll have to try it with the extra dill seasoning sounds like it could be even better if that’s possible😊

I've bn wanting to try that dill pasta salad. I'm a HUGE pickle lover....my grandson is too....he latterly can eat a whole jar of those baby pickles in a big jar & I'm not exaggerating either. His mama has always loved pickles since I've known her n I've known her since she was 11yo. Her n r son met bc we were friends with her dad/step mom so they were childhd sweethearts. Anyways she ate them ALOT during pregnancy so maybe thts y he live them so much. That crack corn Luks gud bt Idk abt that pepper/cucumber salad.
