The correct angle of the knife is very important. - I found if I use a thinner blade knife to carve there is less juice. If there is too much please use a paper towel to dab while you are carving. - also check the angle of the knife while you are carving and try to avoid too many cuts or a lot of trimming. If you are making too many cuts in the same place this can create more juice as well. Please try and let me know. Thank you :)
