Baked at 300 degrees for 1 hour 30 mins. (Time may vary depending on your cake pan and/or oven.)
4 C All Purpose Flour
3 C Sugar
3/4 C Milk [Room Temp]

1/2 Tsp Salt
1 Tsp Creme Bouquet
1 Tsp Butter Vanilla
1 Tsp Banana Extract
1/2 Bottle LorAnn Strawberry Oil

I just love your whimsical pound cakes. A trend in the early 1970s was to make wedding cakes out of pound cake, as I think everyone would agree a well made pound cake is far superior in taste to a basic white or yellow cake. Your playful personality is always so pleasant. And you have done more to emphasize how important the creaming process is than anyone I have ever seen. My mother used your methods. She felt that the butter should be about 65 - 70, because the friction of the electric mixing process actually warms up the butter. You are such a master of your art, I would never question your methods, and your instruction is absolutely splendid. There is one pound cake I have never seen you do, and I think you would love it. It is in a book entitled “Bakewise” authored by Shirley Corriher. She is a research biochemist who has perfected her recipes to a fair-thee-well. To be brief, she replaces a small amount of flour with potato starch (available in the kosher, Jewish section of good supermarkets. She also folds freshly whipped cream into the batter. After the cake comes out of the oven, she brushes it with a quite liquid glaze that is actually more of a syrup. Her reasoning for this is that chemically a pound cake can only have so much sugar and still hold its structure. I have made it countless times, and it is the best pound cake I have ever enjoyed, without a doubt. Her book, I believe, is still in print. Most public libraries have it in their collection. She does credit the pastry chef at the Cherokee Town Club in Atlanta with the whipped cream idea. I do hope you will take a look at this fabulous book. It’s a large, comprehensive book on all aspects of baking, and you would, no doubt find countless other recipes and techniques as fascinating as I did. For example, she solved the problem of weeping meringue on pies by beating in a small amount of a cornstarch and water mixture thickened with heat before whipping it in. Pies look prettier, stay looking great, and cut perfectly without disrupting the meringue. She also is a huge proponent of the use of a baking stone in virtually every case of oven usage. You are an accomplished baker such that you will be able to take her suggestions-or leave them-as you desire, but I do believe you will adore the book as much as I do, and, no doubt, it will reinforce your already gifted, artful and humorous instruction style. She’s a whimsical, lighthearted, no-nonsense southern lady as you are.
