The word “ginataan” is a general term used when referring to any dish cooked in coconut milk. Example conversation, what are you having for dinner? You can simply reply, ginataan. A follow up question will be, what kind of ginataan? Then you’ll answer a specific main ingredient in the dish like if it’s crab, then you’ll say ginataang Alimango.

"Manila paper", "Manila folder", and "Manila envelope" are named that way because they were originally made from Manila hemp (abaca). They were once a major export of the Philippines during the colonial period and the early 20th century. There are other goods that have names that originate from this, but forgotten today. "Manila cane" for example, used to refer to rattan sticks. "Manton de Manila" were shawls that were Chinese-made silk copies of Filipino shawls that were exported from Manila to Spain/Mexico. Capiz shells are of course named after Capiz.

When you loosely describe a food it is without the “g”; like ginataan. But, when you specifically name the dish you now include the “g” like ginataan alimango or ginataang kalabasa. To make it more easier use “ginataan” if you don’t combine or add nouns after it; use “ginataang” if you combine it with a noun. Hope this helps 👍,

Ginataang is a modifier (adjective) to describe how a certain food is cooked using coconut milk. So ginataang alimango means an alimango cooked in gata (coconut milk). On the other hand GINATAAN (which is a noun) is the generic term for any food or cuisine cooked with coconut milk.

Kulas, just to settle the whole ginataan thing. Personally, it doesnt matter how it's said because they really all mean the same. But if you really want to know the technical difference, here it is: You add a "g" to ginataan when you want to specify what kind of ginataan it is. So ginataang alimango, ginataang isda, ginataang saging, etc. For Tagalogs most especially, when you just say the word ginataan alone, it is without the letter g. On the other hand, in Cebuano, ginataan is called tinunuan. The root word of ginataan is gata. The root word of tinunuan is tuno. Same principle applies: add a "g" when you're specifying what kind of tinunuan it is. So for example, tinunuang isda, tinunuang alimango, etc. Bisaya here from Mindanao who has lived half her adult life in Manila. Hope this helps! 😊
