I remember 10 years ago when I would leave comments (bad or good) and John would reply. The videos back then had awful resolution and the crowd was tighter but what never changed was his kindness and great recipes :)

Dipping the taco is a south California thing. As a Birria Ambassador from Tijuana Mexico(Original place of this recipe variant), I can tell you we usually consume the consome as a soup on the side. But it nice to dip too, now we are doing the same at Mexico.

I agree though I had no idea that these were trendy tacos. I add just a little bit of meat to my "consomme", and just to make things easier, I'll pour all of my rendered fat onto a plate and dip my tortillias in it just before frying.

So I just made all this. Followed the recipe. There’s something deeply satisfying about taking the time to develop layers of flavor and making a simple taco after two days time. Little effort, maximal flavor. Thanks Chef John for showing (as always) us how easy and fun good cooking can be. And as always, I enjoyed...it all.

Ironically, my friend here in Baja Mexico just made traditional goat birria and we all ate amazingly good tacos. Yes. Lime juice, onion and cilantro all are very important. I've gotten the ingredients for your beef version, Chef John, and am looking forward to comparing it. Most excellent! Thanks

I like my Birria Tacos without the Consome....The Consome make them Too Soggy....But Food Wishes Consome is Thicker so it helps Prevent them from getting Too Soggy ...Good Recipe

Here in Queens, NY there's a truck that sells only Birria Tacos and in my life I've never seen such long lines of people waiting to buy tacos from this truck. As the chef said, these tacos are the thing right now. (business idea, people).

May I HIGHLY recommend trying Oaxaca cheese? It melts like mozzarella, you can pull it like string cheese or grate it. When it oozes out of the tortilla it gets delightfully crispy and adds just a yummy note to the Birria. The first time I made Birria I ventured to my closest Mexican market and bit the bullet and bought the Oaxaca and Cotija (which i sprinkled on the outside). I went to the mexican market for 2 reasons: 1 - my shop had the cheeses but they were american brands and I was uncertain and 2 - low and behold, the price of these cheeses at the mexican market was 1/4 of the price at my usual grocery store. My son is a chef and he was delighted with the result. He said that the cotija acted like a magic shell on the outside (it doesn't melt) and just Made the dish. As John says, I really hope you try this!

4:30 - TIP - Add the cilantro and the onion only after the taco is already done, this helps to keep the flavor raw and fresh.

I'm mexican. This is as authentic as it can get. It depends on the preparation of the tortilla but assuming that was done right, you have authentic beef birria tacos in this video

Mexican reporting, yeah, i´ll call that quesadillas de birria...with one slight correction my dearest John, the corienda and onions are always fresh, not heated on the pan, because its meant to taste fresh, and also when you add the salsa, that is cold, it helps to cool down the taco and not have to wait to much to take a bite out of it.

@@PockASqueeno nah, the consome should be scalding hot, he means salsa as in salsa, only thing missing from this video actually, a nice salsa to put on top of the coriander and onion to be diluted by a generous squeeze of a lemon/lime, the freshness of the lime/lemon, onion and coriander its suposed to cut through all the strong flavours and heavines of the grease, to balance the taste.

@@PockASqueeno , no no, normally its a hot sauce made with dryied hot peppers that add a layer of smokyness, you might find it as "chile ancho", you might even find it in powder, but its always better to do your own, its a bitter,garlicy, salty sauce with a build up heat that is just great with this meats.

How much shredded beef goes in my mouth while shredding remains to be seen. Anyway I’m very much looking forward to making this and the precursor. So soon I’ll be traveling to the Mexican market for herbs and hopefully veal or goat. Then I’ll be going even further to get awesome short ribs. 😋
