In this and many other recipes, the meat is seared in oil. In other recipes, the meat is seared in the drippings of the lardons. Is one recipe better, or more "traditional" than the other?

Actually, for a home cook version, this is not bad and not as destroyed as all the asian dishes he presents. The only "twist" i would absolutely advise you to not follow is to put (ground) cloves in, it might just fck up the whole dish if you don't like the taste. Chestnuts are probably ok, but i'd rather put them near the end to keep the crunch.

Can't believe even Jamie thinks that adding olive oil to butter somehow changes the temperature at which the milk solids in the butter will burn. Spoiler alert: it doesn't! 😬 Best to use clarified butter or any other high smoke point oil if you need higher temperatures to cook. That said, this is ofcourse a dynamite dish! 🤤
