Part 1: "Ingredients Need to Prepare"
- Hello everyone, today I would like to share with you a dish called Beef hooves soaked in king vegetables. Before boiling beef hooves, I will briefly introduce the ingredients needed to boil hooves.
- Here I have 1kg of cleaned cow hooves. I bought the cow's feet, washed them, rubbed them with salt, then rinsed them again with wine. This method helped the cows get rid of the bad smell.
- There are also lemongrass, purple onions, ginger, cinnamon, star anise, cardamom,
- 20 ml white wine, 5g salt, 20g sugar, water
- Cow hooves: If you buy the cow's feet, you will remove the bones, leaving only the beef tendons and skin like this
- Carrots: 800gr. We can choose big carrots. Then I will shave the skin, clean it, slice it about 3-4cm long or trim the flower depending on everyone's preference. After slicing, add 5 grams of salt, squeeze gently, then rinse with water and let dry.
- King's Tien Vegetables: Here I have 150gr of King's Tien Tien Vegetables that have been pre-soaked. If you use dried king's spinach, use 30g, remember to cut off the top

1. Beef hooves: Choose a fresh piece of beef hooves.
2. Raw vegetables: Carrots, cucumbers, chili, garlic.
3. Cooking oil, sugar, fish sauce, vinegar.

Part 2: "Preparing and Handling Ingredients"
1. Prepare Cow Hoofs:
• Wash the cow's hooves and cut them into thin strips.
• Pour fish sauce, sugar, and spices on the beef hooves and let them soak for about 15 minutes.
2. Prepare Raw Vegetables:
• Cut carrots and cucumbers into thin strips.
• Season with vinegar and sugar to create a soaking liquid.

Part 3: "Making the soaking water"
: Next I will cook the soaking water.
I have 400 grams of fish sauce, 400 grams of sugar, 400 grams of vinegar, and 400 ml of water.
---There are also 40 grams of sliced lemongrass, 20 grams of sliced garlic, 20 grams of sliced ginger, 2 star anise flowers, 1 piece of cinnamon, 5 sliced chili peppers. If you like spicy, replace it with chili peppers of your choice. each person's taste
1. Processing: soaking water: Video 3: I put water, sugar, fish sauce, vinegar into the pot and let it boil. After the water boils, I skim off the foam, then add lemongrass, ginger, garlic, chili, star anise, and prepared skin sticks. When the water boils again, turn off the stove.
While I wait for the soaking water to cool completely, next I prepare to mix. Before mixing, I will also prepare some ingredients. include
-- 2 Carrots: I have prepared and dried these carrots, you can cut them long or trim the flowers. If you are pruning flowers, you should choose large carrot bulbs so that when you cut them, the flowers will be bigger and more beautiful
-- 150gr King Tien Vegetable. I bought this vegetable already prepared. If you buy dried vegetables, you should buy about 30gr to 35gr and cut off the top, then cut into about 4-5 cm pieces and add water to soak until the vegetable blooms completely. Then take it out, add 5 grams of salt, mix well and rinse with water.
Now I proceed with the mixing steps:
This is Beef Hoof. After being in the refrigerator for 5 hours, I took it out and now I will slice it thinly. ---
I prepare a bowl. I put the sliced beef hooves in here. Next, pour in the carrots and vegetables and pour in the soaking water. Then mix it well...you can soak it directly like this or put it in a jar.
