I am amazed and have so much respect for the chef, not only showing us an amazing recipe that we all love, but speaking English that we all understand!! Much respect!! Funny thing lately these yellowish colored egg noodles seem to be hard to come by these days. Amidst the vast world of chinese noodles it seems to have dropped in popularity. I don't really understand why it is, other than trend. I have tried my hand at making them, the result was decent, but I'm not apt to make noodles on a regular basis even to freeze. THey are best fresh same as Italian pasta. If I were in China I might not miss this particular noodle as much but here in America I have been quite fond of it since childhood. Maybe I'm living in a dark hole, I hope I'm wrong, anyway I love Lao Mein & especially with strips of roasted pork. Char Siu. Thanks for the wonderful videos!

Hi lo mein is where the noodles, meat and sauce are all mixed together. For chow mein the noodles are cooked separately and has more of a crispier texture and at the end the sauce and meat is placed on top of the noodles.
