Here is a recipe for Beef Paya (Beef Leg Curry):
Ingredients:
- 1 beef leg or shanks
- 2 medium onions, chopped
- 1 spoon ginger garlic, paste
- 1 teaspoon cumin seeds
- 1 bari illachi
- 2 choti illachi
- 4 long
- 1 inch darchini
- 5-6 black pepper
- 1 spoon coriander powder
- 1 teaspoon turmeric powder
- 1 spoon red chili powder
- Salt, to taste
- 1 cup oi
- 4 cup water
- garam masala for garnish
Instructions:
1. Heat oil in a large pan and sauté onions until golden brown.
2. Add beef leg and cook until browned on all sides
3. Add all spices cumin seeds, long , darchini, Kalli Mirch, bari illachi, choti illachi. Cook for 1 minute.
4. Add ginger garlic paste, red chilli, coriander powder, turmeric powder and salt.
5. Add some watert. Bring to a boil.
5. Reduce heat and simmer, covered, for 4 hours or until meat is tender.
6. garnish with garam masala.
7. Serve with rice, roti, or naan.
Note: You can also cook this recipe in a pressure cooker for 30-40 minutes or in a slow cooker for 6-8 hours.
