Rendang used to be mainly for d Eid festive season, Hari Raya Puasa n Hari Raya Haji. Nowadays, everyday u can see rendang dish all over Malaysia n always a side dish for nasi lemak. Not only Malay likes this dish but all Malaysian likes rendang too. I regret I didn't learn d secret behind my late mom's rendang which is d best in d world, however, I did learn how to cook rendang from my late grandma. I love rendang eaten with nasi impit n kuah kacang, perhaps with serunding too.

It’s true, now rendang it’s an all year around dish. Such a pity you didn’t get your mother’s secret to rendang. But hey, I bet your grandma one it’s delicious also 😊 Not only Malaysians like it, Marco loooves it also, though he can’t take it too spicy 😂

@@elmundoeats Yes Bea, u r definitely right. Rendang, when cooked perfectly, esp to d dry consistency, is absolutely delicious. It's a shame that I didn't take more interest in my late mom's rendang, I helped her a lot in d kitchen, but I wasn't her sous chef, I think she used bits of spices, like cinnamon, clove, cardamom n star anise. My late grandma's rendang is d old simple recipe, very traditional. But both my late mom's n grandma's rendang recipe don't cut short of making kerisik, from d scratch. I, on d other hand, sometimes have time to make my own kerisik, most often than not, buy d ready made from d grocery store. And as for d rendang all around Malaysia, sometimes u taste d good ones, sometimes, oh well it's rendang. I sometimes improvise d taste by adding brown sugar n even soy sauce for beef rendang. Give it a try next time if u like d different taste of rendang. Thanks again for sharing this lovely recipe. Bon appetite. 😁

A question. Why did you discard the water you soaked the chillies in then added plain water to the processor to make the paste?

It’s to discard all the impurities (dust/dirt) that comes with them. Same concept like washing produces before cooking/eating them. Hope it helps!

@@elmundoeats Right on! Thanks for clarifying. Made this recipe and it turned out DELICIOUS! I think I bruised the lemongrass too much though because it came apart a bit as I stirred and cooked things down - so maybe next time, I'll just use the food processor to make a second quick "paste" of the lemongrass with some water! Or I just wont bruise it as much. lol

The one that looks similar to ginger is called galangal. It’s usually in the frozen section in most Asian stores. Hope it helps!
