Well my goodness, what a pleasure to be hearing from Joe's channel once again. Joe, I hadn't heard about Sally passing away until very recently. So sorry to hear about that. I can see God has once again blessed you richly with Roxanne! Roxanne, I've watched you cook and start this year's garden. It's been a real pleasure to meet you (well, at least your hands and your feet) Don't be shy, feel free to let us see your face, too! We won't bite. This is good!! Diabetic meal recipes and preparations. How did you hurt your back? OK so let's hear a little more about how you met your wife. I was thinking maybe at church but it sounds like she is not from around those parts in Pennsylvania. Anyway I am so glad you are back and apparently healthy and HAPPY.

As far as how I hurt my back, it just came onto my hips first while I was framing out some dormers in the garage. So after 5 months of unable to walk without crutches and having pain every single day in both legs I found a doctor that determined that I needed hip replacements. So I had that done. Both of them. My right leg stopped the pain immediately after the surgery but my left leg was still hurting the same way every day. So after a couple more months I went to a back doctor who showed me arthritis around nerves in my 5-6 vertebrae. So he operated and the pain stopped slowly in my left leg it is taking time for the surgery to heal. I had the back surgery at the beginning of last month. If I walk to much the pain comes back but goes away quicker each day. How I met Roxanne, Well after not being able to walk I was surfing the web as they say and I was on a dating sight. We met on there, hit it off right away and decided to not look back and we got married and it has been very good. So we met online but we are both saved Christians and we work with that as a focal point every day that we can.

I'm going to be steeling your meal ideas. I'm always trying to figure out the right things to eat. My doctor wants me to go plant based but I've always been a meat eater. It's hard to teach an old dog new tricks. Can't wait for the next video. God Bless! By the way, tomorrow (the first day of Spring) is suppose to be 76 degrees in Tulsa so, maybe a little warmer weather is in your future.

Right at this moment it is snowing and 28 degrees. The ground is covered but spring starts here in May usually after the 15th. I lost 35lbs since eating what is good for my diabetes. I still crave some of the snacks but really try hard not to eat anything with flour or sugar added or put into them. Plant based would never satisfy me. I can eat a salad but there better be meat somewhere in it.

Being a diabetic is hard enough and keeping on a good diet is sometimes frustrating but we are working on doing it right.

Have you thought about using mashed cauliflower as a substitute for mashed potatoes? To be honest with ya, it ain’t that bad. A little salt, pepper and butter and you can trick the taste buds into thinking it’s potatoes.

Yes we eat a lot of mashed cauliflower and you are right it tastes just like potatoes to me. But my brain trys to disagree with my taste buds.

I have heard if you cut the potatoes up in cubes or slices place them in water in the fridge overnight it takes the starch out of them .

We tried that but actually sweet potatoes are the best for Joe. After eating that meal the other day his sugar went down without a shot.
