The usual trip to the butchers on Thursday will now include beef ribs. I try not to turn it to charcoal like I did with the shin beef last week end. Thanks once again Tom - God I feel hungry!

Did two long ribs yesterday which took around 5 hours before it stalled at 92 degrees. The probe went in easily so I stopped the cooking and let it rest. Good bark, a pink ring from some peach chips with beech chunks in the coals. It wasn't as juicy as I would like but not as dry as some of my previous cooks so I might be improving. Trying to keep the temperature around 150 degrees took some doing even though there wasn't any wind; seriously thinking about getting an Inkbird temperature controller which are on ebay at the moment at £150 or should I wait until black friday. Anyway thanks for the video, it wont be the last time I do this.

Great video mate. I think that I'd have wrapped it when you first inspected it, then open it about about 30 minutes towards the end. The camera makes it look quite dry 👍🏻

In UK our beef isn't as old as US, so the ribs aren't as fatty and large, also bear in mind normally short ribs are braised in liquid here so a leaner rib isn't a problem..... Love the bark on that, darker-better 👍👏👏👏

Heads up Costco sell big packs of short ribs as do Waitrose on their meat counter

@@BBQLIFE that’s a shame. Worth popping down and investigate getting a Costco card, there’s very few actual restrictions to getting one if you go to the membership counter. (I may even be able to refer you if you have no luck). But they have an absolutely outstanding meat section. Incredible pork and beef ribs and all sorts of other cuts. I always load up mostly on their meat any time I go.
