I guess it also matters from which language you are coming from. What makes the Hungarian tough to learn is the fact that it does not resemble any other languages. And when I'm saying this, I am not only referring to the actual words but to the way a phrase is composed.

Why "eszem" and not "eszek"? I'd think it would be indefinite

You're right, the correct sentence is "Én almát eszek", because "almát" is an indefinite object.
